Super Easy Thighs - for Pellet Smoker
This cooking method starts with a cold pellet stove. Chicken (thighs/wings/legs) are seasoned and placed on a cold smoker. Turn it on and set it to 400 degrees. Start checking temperatures around 45 minutes. You are looking for 165 - 170 (thighs actually like a little extra temp). Once at temp, slather with your favorite BBQ sauce and leave on smoker for another 10/15 minutes.
A note on rub: I just use salt, pepper, and garlic (SPG). Any rub will work but you should use one w/o sugar as the high heat will cause it to burn.
