In case it hasn't already happened since this video: The experience you're describing in minute 15-16 about being able to see at a glance that the redstone isn't quite right, the same thing happens for programming. From what I've seen in your videos, you are extremely well suited to programming. I would be thrilled to have a coworker as intuitive as you working on the same project with me! And the maths skills pick back up pretty quickly. Those circuits aren't gone, they're just dusty.

1:00:30 Zombies picking up items is based off of local difficulty the longer you stay in one area the higher the local difficulty almost every area in hermitcraft has high local difficulty I'm guessing you've only been in that area for 1 hour so that's not long enough for zombies picking up items chance to increase. But it is also affected by difficulty
