The reality is that the closest tasting bar to a cacao bean was actually the most expensive one as when they get the beans it tastes bitter so most companies add other flavors like vanilla and sugar to make it more appealing to the consumer

No, almost entirely wrong. The level of bitterness is more dependant on the level of cocoa solids vs other ingredients, more than anything else. To’ak Chocolate bars are 65% cocoa which is virtually inedible unless you already have an inquired taste for very dark chocolate.

⁠⁠@@Rocket_Surgeon That’s actually really interesting because I genuinely enjoy Ghirardelli’s 72% cacao, but I never had to develop an acquired taste for it. Their 86% is where it gets a bit questionable for me. This actually reminded me that there is a gene which impacts how a person tastes bitter things which makes sense why some people might find 65% to be virtually inedible while others enjoy things well past that. I also assume what the other ingredients are also plays a role though?

The reason the 500 dollar choc is bitter has some history. So the first ever civilization to make chocolate were the native Americans, like the Olmecs, etc. they didn’t have sugar nor did they use it for their chocolate, which was used for religious ceremonies. Since the new people discovered America, they adapted chocolate from them but with sugar

if u live anywhere near me [london] go to a corner shop. look for a chocolate that is half red and half yellow and is Euroshoper brand. it's around 57p-87p so less than a pound. it's really good

The darker the chocolate the more bitter it is that's why a lot of chocolate will mention the percentage of cocoa to other ingredients. I've tried an 80% and wouldn't dream of trying anything higher as 80 was very bitter. Usually the lower the percentage the more "milk chocolate" it becomes, It also changes how fast it melts. Dark chocolate, milk chocolate and white chocolate are three different things with white chocolate not even being chocolate.😅

I actually think dark chocolate is the worst one. My mother’s sister delivered me a 99% dark chocolate and I’m not even lying; it was so bitter that we had to spit it out every time we had the courage to eat it. To this day its laying in the freezer and the year it came in was like 2020 or something. White chocolate is the best because whenever my father goes to Europe and gets me some, I love it.
