Vegan "Chicken" Rice
Serves 4
Broth:
1 tbsp vegetable oil
4 cloves garlic, crushed
1 - 2 inch ginger, sliced
Handful of scallions, chopped
2 litres water
1 1/2 tbsp mushroom seasoning - bit.ly/3qYJ67o
1 tbsp salt
1 tbsp nutritional yeast

Rice:
2 cups jasmine white rice, washed and rinsed
1 cup water
1 - 2 pandan leaves, knotted
2 cups mushroom broth
3 tbsp vegetable oil
4 cloves garlic, minced
1 inch ginger, minced
1 red onion, minced

1 tsp salt
Chili sauce:
8 red chilies
4 cloves garlic
1 inch (15g) ginger
60ml mushroom broth
Juice of 3 - 4 calamansi limes
1 tsp salt
1 tsp sugar
Soy sauce:
2 tbsp dark, sweet soy sauce
1 tbsp mushroom broth
1 tsp sesame oil
Ginger garlic sauce:
4 cloves garlic
1 inch (15g) ginger
1 tbsp vegetable oil
To serve:
Cucumber slices
Fried shallots
Sliced scallions
Red chilies
Coriander
