Flavor is just a sensation, and new sensations have an inherently bigger impact than old ones. If you've eaten often enough from these restaurants for the novelty to wear off, then you'd likely prefer the original dish over the remix. But most people that eat there are just visiting, and enjoying a new experience.

Here in Austin,TX, we have a pokerito which is like the sushi burrito but you can also get flaming hot cheeto crumbs wrapped around it loke the flaming hot burrito. This all at poke house
