Canadian here. Our family came from Northern Germany in the 1,700 hundreds. My mother made sauerkraut soup often. She used sauerkraut and potatoes along with a local but German style sausage. Delicious.

Thank you so much! I miss German soups so much especially the chicken soup. My mother in law made the best chicken soup and celeriac seemed to be the secret weapon. Even my ex-wife who was not a good cook made excellent chicken soup.

nice video and nice editing. very creative. kohlsuppe was a staple in my german/american family growing up, and i've done variations myself, as i prefer kale, but sometimes i use cabbage. i also often add chicken or some sort of beef sausage, usually kielbasa. we always added lots of veggies, which was a thing my grandmother started, so it was more of a vegetable soup.

I think that is the beauty about the soups and stews - you can add so many nice veggies and some sausage and you are good to go. Next time I will try the Sausage version for sure!

Wow so many German soups! My favorite all year round soup and or winter soup is chicken macaroni soup (with milk and heavy cream). Looking forward to your next video about carnival foods in Germany 😊 I am really enjoying your channel, glad that YT recommended it :))

Another great video, my one pot meal is Goulosh.Modified my mother recipe slightly,elbow macaroni and cheese ,ground beef,onions and tomatoe juice.But I usually use V-8 juice and add more cheese. Funny as a kid wasn't my favourite now I crave it.☺

I love eintopf, particularly linsen and kartoffel. I still make the linsen eintopf from my Oma's recipe written down for me 60 years ago. This was speck and onions fried together, lentils which had soaked for 24 hours, leeks carrots and parsley. Then fried and diced belly pork added with all the fat from the frying pan. It is the most delicious food you can ever eat. My grandkids can eat it by the gallon and it's by far their favourite comfort food, as it was for me all those years ago. Thank you Marta for showing me that it's still loved. -Mischling

I made cabbage soup yesterday but I add homemade sauerkraut to it also along with sausage and some homemade corned beef potatoes and such.

I think I will be making soup this weekend! Maybe I will make my families (German immigrants) Leberknödel Suppe, but only me and my daughter eat it. My favorite one pot recipe would be Kapusniak, that soup is loved by everyone and has really amazing flavors! I make with Potato, Carrots, Bacon, Kielbasa, Cabbage and Sauerkraut and almost forgot with fresh dill. ❤️❤️❤️

Greetings from Regen in Bavaria Germany where the "Pichelsteinerfest" is still a tradition. The last two years it was canceled unfortunately but hopefully we can celebrate together in near future again 🥺

Just south of you in Franken & Schwaben land they make an eintopf from double-smoked bacon. It is left in a block and stewed until about as fall a part as it will get. It is then taken out and eggs are whisked into the broth so that they make noodle like strings. I've seen onions, potatoes, cabbage or kraut added in, celery root, rutabaga, carrots...most any sturdy vegetable at hand for that matter. The double-smoked bacon is then cut into portions and added to each plate. If cabbage has been used, some sprinkle apple cider vinegar on top. I've also seen variations where the vegetables are left quite large. Strangely, last time I ate such, was in Wisconsin, not Germany. It can also be found amongst some Amish.

It's a simple egg drop soup just using the typical natural smoked bacon from the Spessart, Odenwald, or Black Forest variety for your broth.

Hi I'm in South Africa. My fav one pot winter dish is broccoli chicken. Chicken, broccoli, onion, spices and cream. All cooked together served on wite rice.

For me stews are the best foods ever, so comforting and filling. I cook a lot at home and love all of them!! I recently made a huge chicken soup with organic chicken and the SECRET ingredient is: TURKEY NECKS!! which after 4 hours give the soup a deep flavor! I also made a hybrid goulash and white been soup and tomorrow I am making split pea soup to which I will add Kabanus dry sausage...SOUP is LIFE !! I eat these stews ALL year round :) XOXO from Tel Aviv...

The first thing that I did after reading this comment was checking what is the weather like in Tel Aviv and you certainly eat stews when it is still warm outside:) I guess Tel Aviv never gets too cold, like Germany. There are some traditional restaurants that do just organic. For example Daheim im Lorsbacher Thal is a apple wine tavern that do just organic food. For the moment most of the reatuarnts are closed because of the second lockdown, so I won't be finding any stews. Oh well, let's hope they open for Christmas season!

Linseneintopf kann man wunderbar mit geschnitten Scheiben saurer Gurke verfeinern. Klingt komisch, ist aber total lecker. Hat schon meine Oma gemacht. After cooking - When you serve the Lentilsoup try adding slices of cold pickled cucumber. Sounds weird but it's delicious.

I think one thing that is important to note, when she/germans/central or eastern Europeans mention "celery" they DO NOT mean celery sticks/ribs but rather celery root/celeriac - its the same plant but totally different part, below ground rather than above. Im in the UK and we distinguish between celery and celeriac, however as i have a German mother ive obviously grown up eating a lot of German dishes!

Tried the mushroom soup at a German restaurant in San Jose, down town. Was great lots of mushrooms and thick hearty soup. That's the way all soup should be. Maybe some onions in it also. Anyways it was great. German foods are great. Want to eat more of it ,like the way I like Italian foods.

I have made them in a pressure cooker and they turned out fine. My device has an Auto setting where it starts at a higher temperature and then goes down. This worked perfectly.

Patrick, I forgot to mention, that one wants to make sure the pressure is released slowly at the end and the pressure cooker is not cooled down under cold water to speed things up as this might lead to retardation of boiling with the hot fluid / soup pressed out through the release valve.. I just turn off the heat and allow the pot to cool down on its own and slightly rock it before opening so the soup has the same temperature everywhere, but you will know this already anyway... just to make sure for health and safety... 😃 Merry Christmas!

Linseneintopf mit Wuerstchen. (the red wurst you find in Schwaben.) They are a bit like Frankfurter Würsten. You put one in whole, sinking like the TItanic in the lentil soup. Often has Spaetzle as well.

My favorite is Soljanke, the sour soup is delicious. What made it better was the bread and wine we had with it. Good to see you used the rutabaga. Potatoes and rutabaga mashed together with butter and cream. Serve with your Jaeger schnitzel. Enjoy carnival.

my mom is Greek, so she never cooked a rutabaga in her life. I used to work for a German head chef and learned that from him. He also put frankfurters in alot his soups. But honestly, I didn't really care for them. I like my franks between a bun with mustard and chili sauce. LOL

That's so funny!:) In Frankfurt, we would never, ever put our Frankfurter between a bun :) Americans are always very surprised because of that when they come to Frankfurt. I was in Germany from 86 to 89 stationed at Mc Cully barracks next to wackenheim. I had some potato soup in this region and I loved it now i need a recipe for it.i have tried for years to recreate it and not so good. Can you please help me

In 30 minutes t I will be having a variety of German sausages with bacon, potatoes, onions,and and Bavarian style sauerkraut in the slow cooker for dinner. I browned the slices of sausages and bacon, then browned the potatoes, onion, and garlic in the rendered fat. Then 6 hours on low.

I make a Greek beef and green bean stew that's very similar to number 6, but with tomatoes and potatoes. Unlike my mom who likes the green beans overcooked, I prefer them al dente.

Hm.. I guess tomatoes and potatoes would go very well with it. Would you use canned tomatoes? And what spices would you add? Because tomatoes in a soup need probably more than salt & pepper.

I prefer canned whole plum tomatoes. I just use dried oregano. I keep it very simple. But other spices would be fine.

One of our favorite soups I make, Split Pea with Ham, heavy cream, chicken broth, carrots, blue cheese, smoke flavor, Sea Salt and pepper also thick and creamy potato soup with ham, celery, onions, Sea Salt and pepper and cream and chicken broth

Es sieht echt gut aus. EinTip zur Erbsensuppe. sie schmeckt noch besser wenn man gekochtes Sauerkaraut vom Vortag dazu auf den Teller gibt. Zur Linsensuppe gehört unbedingt Lauch und etws Knoblauch. Du warst in Frankfurt? Ich lebe 20 km nördlich von Frankfurt. In dem Ort wo das Telefon erfunden wurde.

@@cooking-the-world Sehr gern geschehn. Gerade noch ein Tip zu Steckrüben. Meine Oma hat daraus einen Stampf gemacht. 50% Steckrüben/Kohlrüben 50% Kartoffeln. Etwas Butter, Pfeffer, Salz, Muskat. Dazu hat sie Wellfleisch gemacht. Es war köstlich. Wenn etwas übrig blieb, konnte man es am nächsten Tag kalt auf Butterbrot essen. Meine Oma lebte in Bad Homburg Kirdorf, ich komme aus Friedrichsdorf.

When she says Cumin, she means Caraway Seeds (Kümmel, not Kreuzkümmel). In Germany we are not used to cook with cumin. Great dishes though.

My fiancé is German and I would love to learn to cook his food but I'm not used to stews where the broth is so watery. Normally I like it thick and rich. But I will try to enjoy his type of cultural food

If you like thick soups than I think you should go for German Lentil Soup, Pea Stew or Potato Soup, those are the thickest and I think you will like them too.

Oh nein, kein Olivenöl;) Oder nur für Salate. Es gibt keine Olivenbäume in Deutschland;) Für die traditionelle Küche benutzen wir eher Sonnenblumenöl, Schmalz, Butterschmalz oder Butter 😀

My Mother's maternal Grandmother came from Stuttgart in the middle of the nineteenth century. A number of Mother's dishes were still distinctly German. Mother sometimes included home made spetzel in vegetable soup. Beef stew often was topped with moist but light, fluffy dumplings, one per serving. Are those dumplings German, or something else? I do not have her recipe but I am sure they were made from flour not potato.

@@cooking-the-world My sister had Mother's recipe! 1 up flour. 2 tsp baking powder. 1/2 tsp salt. Stir together and add 1 egg and 2 tblsp oil. Then stir in 6 tblsp of water to make a soft dough. Drop 1 tblsp of dough at a time on the meat and vegetables. Cover tightly and boil for 15 minutes. The world is much smaller and more cosmopolitan now than growing up in the fortys and early fiftys. We almost never dined out. Home cookung was basically what Mother had grown up on. Our Mother occasionally tried a printed recipe. She made spaghetti according to a neighbor's, and eggs-foo-young according to a book borrowed from a Chinese colleague of Dad's. We also enjoyed some things that were clearly "family", like the large quantity of "Springerlie" at Christmas! What I have been trying to sort out is which of Mother's dishes were old country family carry overs and which were not. Everyone in the world seems to make dumplings of some kind! For this reason I have wondered where Mother's came from. Note: I believe your "multaschen" are made with a flour dough. They seem strikingly similar to ravioli! Thank you!

I see many European recipes call for "1 package soup vegetables" or similar words. This is not available in the US; of course there are plenty of vegetables, but we buy them individually, rather than collected up in a mixed package. Please tell us what''s in a package of soup vegetables.

I am sorry to hear that and thanks for mentioning this! One package of soup vegetables has 750g (1.65 lb or 26 oz) of mix vegetables (usually 3-5 carrots, 1-2 leeks, celery root, parsley (green) and sometimes parsley root).

I just thought of another eintopf style soup that is very German traditional. It's called Schlachtsuppe. But also known as Wurstbrühe, Metzelsuppe, Brotsuppe, or Greddelbrühe. It was first noted in 1617 by the brothers Grimm. It is a soup that can be made into an eintopf, that is very transitional in the Autumn months. In the village I use to live in, when a farmer butchered a pig, is when it was made. To make much of the kochwurst types, but also to get all the meat off of bones, such meat & bones would need to be boiled first. To do so takes a massive pot, that cooks over an open fire for days. And, once the meat and bones are taken out of the pot, what is left is a very savory soup of small meat pieces and marrow. There is so much soup in the pot that it is tradition that all the villagers would come by carrying small milk cans to get their share of the soup. (There is no way a farmer's family, no matter how large it is, could eat all that soup before it spoils.) Here too, all the traditional German vegetables can be added into the pot. As we were the farmers butchering, we usually just made Brotsuppe so as to save time away from cooking. (Dry bread & green onions usually.) Directly after WWII, it was this soup and tradition (that anyone could come by and get their portion) that fed many people who otherwise might not see meat for weeks. Even into the 90s, we had Frankfurter families who kept up the tradition of coming by and having Brotsuppe with us.

Pumpkins are from america, they did make it back to europe but never enjoyed much popularity. The source of Cinderella is believed to be french, or rather a german version of the original french tale. There is a (mostly east) german version of it that is so different that they now look like 2 different tales, but they do have the same root. The splitting your boyfriend mentioned is most likely the one of the frankish empire that happened after the the death of charlemagne, his grandsons split the empire into 3 sections: the west wich was basically central and western areas of todays france, the center wich was the bit around todays Luxembourg, belgium and also parts of eastern france and western germany and italy, the west was made up of german swiss and austrian areas. That was around 800 A.D And the central kingdom didnt survive for long, the east and the west started a war over that land wich is also the start of the whole alsace-lorraine dispute that would come up over the ages again and again until the 2nd world war nearly 1000 thousand years later..... Italy was in the same spot because who ever got italy could claim the crown of roman Emperor. That being said its not like those 3 areas had the same culture in that time, 1 reason for the split was exactly those differences in culture. Another thing is that those areas might be on the same lands as todays france italy and germany, but it would be wrong to think of them as such, the franks are more like the grandparents of todays nations in that region. if you are interested in a real melting Pot of those 3 cultures i recommend looking into Switzerland, its generally counted as a german area, but its actually devided into a german speaking, a french speaking and a italian speaking part. German history is a beast you should be prepared for, there are a few good videos on youtube a bout it, but most are sadly really Simplified so i recommend watching a few different ones to get a better picture, the topic that should clear up most of your questions is the HRE, the Holy roman empire. I hope i could help you get at least a few answers :)

However the X s werent matching with French Cookbooks with Pumpkins in the 1500s . I always felt Cinderella ( I also heard initially French ) was German feeling . My German friend told Me there are Stories from Germany about And about after Cinderella And The Prince wedded . I look at Folk Tales And Mythology as probably Real . I keep looking for the vegetable we call celery and don't see it. We call what you use celery root. It's harder to find but not impossible.

I think it's not that typical to use celery in the German stews. Rather - as you wrote - celery root. Celery root can be also left out, I wouldn't replace it with celery, because it would change the taste of the soup.

Agreed, celery root, aka celeriac, would work well for stews. We use celery for light soups in the US, but it does not have the body of a root vegetable.

Hahahaha! There are not many traditional German dishes with garlic, as garlic for many centuries was used as a medicine, not a spice. Nowadays Germans use also garlic, but the traditional dishes developed in 18th and 19th century just don’t contain it.
