For another meal you could take some of the bean mixture and using a fork mash them then add a small amount of cooked rice , seasonings and a little of the bean water ,mix together then form burgers. Place on a tray in the freezer . Once they are set fry them on the stove. To serve top the burger with sautéed peppers and onion, and a little rice on the side.

I think this is part of the problem: when people don't have much to spending they go for convenience foods, they absolutely will not have enough to feed their families...but this goes to show that using more basic ingredients and a little bit of cooking, you CAN actually feed a family with very little money. If you bought this along with a box of eggs,some oatmeal, and even with some of the bulk packs of beef I've seen people buy, you'd be able to feed your family for a week or even two weeks for $20-30. Will the meals be really exciting, especially without spices? Maybe not, but it WILL be enough to fill bellies and provide what you need. Sometimes good just had to be filling and plentiful ,and that needs to be good enough. We are spoiled nowadays, let's be honest.

Ground beef is $5.99lb here, eggs $3.99.. so $30 wouldn't get you very far here.

Most people with low incomes and low wealth also don't have a lot of things that make it possible to eat well on a small budget: well-functioning appliances (fridge, freezer, stove, oven, slow cooker, etc.), cookware and bake ware, easy access to grocery stores with a wide variety of nutritious, low-cost items, and above all, the TIME and energy to shop and to plan and cook meals from scratch. Poor people tend to work longer hours and in jobs that are harder on their bodies, and are more likely to live in food deserts. If you live in a food desert you have to spend more time and money on transportation. If your finances are month-to-month, and you have no savings, you can't afford to buy things in bulk or stock up when they go on sale. If you work all the time, you can't visit the grocery store frequently or at certain times during the day or week in order to take advantage of mark-downs and clearance pricing on meat and produce. If your home is small, you don't have the space for stockpiling. If you're poor, you're more likely to live in a home in which you'd need special storage for bulk foods in order to keep out insects and vermin. And all of these poverty-related challenges are further complicated if you're disabled or are in poor health or are the care-giver to someone who needs full-time supervision or support. Think about it: A $69 Costco membership absolutely pays for itself over the course of the year in savings, but if you don't have that lump sum or don't have access to credit in order to finance it, or have no way of getting out to a Costco, you end up paying a whole lot more for the things you need that you have to buy elsewhere. Just an example from where I am in Canada: Generic Robaxacet costs $43 for 100 caplets at the drug store down the street, and at Costco it's $14 for 180 caplets. It turns out that life is much more expensive when you're poor.

Absolutely! When I married my husband he was spoiled by his parents who could never say no. When he found out I was going to dollar tree to make dinners he cringed.....yet he ate them and loved them and has asked for more. We're a family of 6 so when I can make a batch of unstuffed pepper casserole for less than $5 AND have leftovers for him to take to work.. I'm not ashamed to save money and feed my kids!

To save money on the greek yogurt, use regular yogurt at half the price, cottage cheese run through a blender, or sour cream.

I just recently discovered you. I love your content! This year I'm doing a consumer math class with my homeschooled son for his last year of high school. You've inspired me to add budget meal planning to the budget planning section. It's more important than ever for our young people to learn how to live on a budget!

I'm from Louisiana so these kind of meals are a staple for my family. While not authentic, this was one of the more successful ways I've seen it done on a budget. Oh and if you ever decide to try the cornbread again, I'd recommend using a can of creamed corn as the liquid component. Start with a third of the can and add more until it's the consistency you prefer or use water. It's a different texture but the flavor is very good.

I think you did a great job making the $10.00 stretch! I’m not sure if people realize beans are a protein source and replacement ! The meals you put together were pretty well balanced and like meals country folks have eaten all their lives !! Great job 👏👏👏

I am really changing my mindset on meal prep. A cup of Peas fresh, frozen, canned has 8 grams of protein. And there are several other vegetables that in addition to Vita A, C also have protein. I will not stop eating meat but by being creative I can save even more money. In my area one Green Pepper is $1 29, Red, Yellow, Orange Peppers have been as high as $1.89 each - they are sold separately. So the bag of frozen veggies was a better buy.

We don't have sausage that cheap but I always get the spicy garlic sausage and I cut it into very small pieces, That way it spreads through the entire skillet. Another tip is to put an extra spoon of your oil in the pan and frying the rice a little then set it aside and put a char on the peppers and onions this adds flavor.

Great job! I am amazed at the price difference for Walmart in other states. I still can’t find smoked sausage cheaper than $4.18 at my Walmart here in Washington state. One of your subscribers commented previously that smoked sausage is available for 1.25 at DT. My DT does not have refrigerated section so I drove to another DT 20 miles away in search but still no luck. I agree Brooke is great!

for the casserole i would try using regular cornmeal and mixing it with some water and salt and making a polenta/mamaliga/type of corn porridge which would save you the money from buying the greek yogurt and also have a bigger yield and use that on top of the casserole

I used to survive off of $10 a week from the dollar store when I was 20-21. It’s all I could afford after bills and rent. I’d always get a bag of lentils or the fried bean soups. Easy cheap protein. Then I’d get some cheap frozen veggies, a box of cheap cereal, and some cheap milk.

Aldi’s sell sausage rolls for $1.88 I’ve been using those as a substitute for hamburger. It works great in things like spaghetti and it’s more affordable.

I love that red bean casserole idea! I think I’ll try the frozen seasoning blend instead of the pepper and onion blend in my red beans. I want to try making it cheaply but with cabinet spices.

If you find a good deal on a hambone or save it after Thanksgiving, you can cook it with the beans in a slow cooker and it turns out so amazing! And I agree with the seasoning blend, its got the celery and parsley added that just give it that extra something.

We actually use that smoked sausage with our black beans, sausage and rice crock pot meal for 3 people. I am trying to not cook so much. We always have leftovers in the crock pot. I have the smallest crock pot possible. Such a filling hardy meal. It cost about $4 to make but we get 2 meals for 3 adults. I LOVE Southern Frugal Momma - Brooke.

For a little more variety you can get 1 lb of rice and 1 lb of pasta to have more variety, instead of 2 cans of diced tomatoes you could get one can of tomatoes and a can of mixed vegetables and add in even more variety, great job with the cornbread topping on the casserole, that’s a nifty way to switch it up, adding that sweet element sounds delicious too!

Just an idea...switch a can of tomatoes for 6 eggs and do an egg scramble to get away fromrice one night. Great job Mandy🌸

I was raised in the mountains of WV and we were extremely poor. My mother fed us on a super extreme budget. We ate dried beans, rice, potatoes, powdered milk, powdered eggs, and anything you can make with flour and cornmeal. There was no variety but we had a full belly and that's a good thing.

Another comment, 1966 to 69, horrible husband who was never home, I was not a good cook so I do not remember what I was making, but we did survive, I did not think that I would be able to make it through those terrible years with an bipolar, alcoholic husband but I did. Kids are a little scarred but functioning and contributing adults, I'm a beat up old biddy at age 82, but we try to stay positive.

I love doing rice bowls with meat or beans, whatever I have on hand and I will add a low sodium soy sauce cause I have it to use. Yogi's restaurant where I live has a chicken teriyaki rice bowl for $15. And we can make it at home for cheaper.

I get a can of pasta sauce a box of elbow noodles a pound of hamburger a can of petite diced tomatoes and I make goulash basically, and eat it for like 2-3 days....people would be blown away if you saw how much we waste on fast food and convenience stores!!! Awesome ideas! This is more similar to what I would cook to my family. I would of make some chili with the leftover beans and rice just buying the small packet of seasoning add more water and pour it over the corn bread. Just to change the flavors a little.

Your challenge your rules! I personally think spices are fair game. If you are cooking to serve you & your family, you should make it the way you wish. Most people watching these vids have spices imo. I think there’s a hack for using cornstarch & water as an egg substitute

Just curious, do you use a toaster oven? You don't need to preheat it,which may help on hot days, perfectfor single person meals,and saves time on preheating,etc....🤔🤔🤔🤔

You say you got 15 meals from this, but unless I missed it you didn't say how many servings you NEEDED to make per day. Do you have 2 in your family, 3 in your family or 5 in your family? Did you make 3 meals out of the beans and tomatoes or 5. Not clear to me.

Next challenge you do you need to do what a person who is truly on a tight budget does. They will only have $10 to feed their 2 kids and husband 5 days. Take Only That $10 in the store and NOT A PENNY MORE for Breakfast, Lunch, and Dinner. Do Not Use ANYTHING YOU Don't buy on this trip!! No Seasonings, Butter, Milk or ANYTHING ELSE YOU HAVE IN YOUR Pantry or Refrigerator. After all someone who is shopping on a budget like that doesn't have any of that stuff left. By the time they get the money to go back to the store. Now that's a challenge.

I really feel this had help kids going to school also!! They should know how to cook, besides living on Ramon noodles and fast food! They need tons of protein! Well we all do!! I think it’s awesome what you do!! I love challenges, I look what I have around my home, it’s just me, and I love creating!! My grandkids even love finding what we can create when they’re here! About 19 66 or 67, four babies in my grocery cart, I got home and there was a jar of caviar. OMG, I took it back to the store because the kids had grabbed it and put it in the cart. Clerk gave me a refund, turned around and dropped it and it broke. I booked it out of there as fast as I could.

I cook this way but I think longer term by buying real, plain cornmeal because Jiffy is too sweet for us. We try to watch our sugar intake. Also, I would spring for a little bit higher quality sausage because Morrell is manufactured by a scrupulous company in addition to not being the healtiest on the market. I shop clearance and discount stores in order to have a little bit higher quality food. The frozen peppers and onions are a great idea because we use them along with onions so very often. Saves chopping time... so why do I forget so easily? 😳😄🧅🫑
