I think this side to to side head bobbing is a psychological phenomenon as most of us are even not aware about, while doing it. I believe it has something to do with how we are brought up in our childhood. Envision seeing a child being force fed in India, what is the basic denial mechanism? My personal observation is 90%+ cases it is side to side head bobbing. So under stress or intense concentration we unconsciously trigger that side to side head bobbing. Hence this observation by the OP.

And yes, the gesture is used by Indians but not all Indians. Some Indians do. I have seen it being done in my family and in my school. We actually do the Indian headshake combined with a normal handshake but it varies in different parts of India.
