This 1930s "economy" dinner is love at first bite. The braised cube steaks are meltingly tender! Ingredients are listed below:
1930s Braised Cube Steak Dinner
Ingredients for 4 servings
4 cube steaks (approximately 1 1/2 pounds in total)
Salt and pepper
All-purpose flour
2 tablespoons neutral vegetable oil
1 3/4 cups water
1/4 cup Worcestershire Sauce
8 baby red potatoes
2-3 medium onions, sliced into half moons
3-4 large carrots, roughly sliced
Preheat the oven to 350°F. Sprinkle the steaks with salt and pepper. Then coat the steaks with flour. Heat the vegetable oil over medium heat in a large skillet or braising pan. When the oil is hot, add the steaks and quickly brown them on both sides. Then add the water, the Worcestershire Sauce, and, if you wish, a generous tablespoon of flour that will thicken the gravy. While the liquid bubbles, use a flat spatula to scrape up the bits of meat and flour that have stuck to the bottom of the skillet. Off heat, add the potatoes, onions, and carrots. Cover the skillet and transfer it to the preheated oven. Braise until the steaks and vegetables are perfectly tender -- usually 1 hour. Enjoy!

In Texas, we coat the tenderized cube steak in a seasoned batter and deep fry it. It is called chicken fried steak. They are tender if done right and very filling. Came from German immigrants to Texas. It is served with a yummy cream gravy, mashed potatoes, bread and some vegetable, usually corn. So high in carbs it will make you sleep. This tasty steak is crunchy on the outside, tender on the inside.

You might want to add the flour to the braising liquid before adding to the pan. That will prevent the lumps on the meat. This recipe is a bit like the smothered cube steak we make down south, but we don't cook it so long. We also use a lot more seasonings and beef broth and make a roux with the pan drippings after browning the steak. I might try this recipe.

Kevin, only you could resurrect an obsolete cut of meat! Years ago, we had a recipe called "Dip and Dunks" the sauteed cubed steaks were served on toasted buttered english muffins and everyone had their own little cup of au jus or beef broth and you could dunk it with every bite. I forgot how to cook the cube steak for tenderness. Next time I see cube steaks I won't pass by. Thanks for inspiration and creativity and not expensive!

Thanks again this was excellent Sunday meal & I bought the cube steak@ Walmart 🤣. Used beef broth in place of water and tablespoon of lea and Perrins.

I make this as well. It was one of my favs growing up. Cube steak is a highly underutilized cut of meat for sure. I like the pork kind too, but you don't see those at the grocery very often.

Instead of using the plain flour try using mushroom soup powder it's fantastic 👍😜🇿🇦 Was a regular dinner in our household as Mum had a large family to feed.

Worcestershire sauce is one of the greatest condiments ever invented. HP sauce is also very good, but harder to find in the U.S.. I mix 1 part A-1 to 1/2 part Hines 57 and a small squirt of ketchup for a decent substitute for HP sauce. Which you probably already know stands for House of Parliment.

Kevin, looks scrumptious! My hubby used to have cube steaks and I've made them sometimes, always good, but not as tender as your recipe. We've had water in our lower level, absolutely awful, and are out of sorts! Also, the temp here in Central Illinois has not been very hot and thus the tomatoes are not ripening. But my round zucchini and cucumbers are okay. Cheers!
