Same here...that was my dad's favorite pie, too! My mom made pies all the time...made fabulous pie crusts...her all-time favorite breakfast was a piece of pie and a cup of coffee...like you, miss my parents every day 😥

I love lemon pie both of these looks absolutely delicious ,one of my aunt's used to make a ice box pie that she called a pink pie it was really good I am not sure what is was made out of maybe jello it had kind of a strawberry taste to it and she made vaniila wafer crust for it

Love those pies!!! So simple to make & delicious! In summer I mix a tub of Cherry yogurt with a tub of Cool Whip. Just fold in and cool in fridge. A nice light cool dessert. My family & guests love it!

Homemade Lemon Icebox Pie made with Niller Wafer Crust is my all time Favorite Pie in this world n Coconut Cream Pie is right there with it but still second! Nothing in this world taste as good as these 2 pies Tammy! I'm 66 yrs old n since I was a lil girl, I've never grown old of them! Don't get me wrong, There's other pies I Absolutely love but Lemon Icebox is my Favorite! Thank you for making my mouth water really bad before I can get mine made before Christmas! Lol. I guess you don't like the raw egg yolks. There are so many things that we eat that has raw egges in it. You can bake the pie for 20 minutes if you want them cooked.

@@CollardValleyCooks No, the thought of eating raw eggs brings to mind the Sylvester Stallone movie where he was a boxer or something like that and he ate a raw egg everyday! The thought gags me. I would have to bake the pie, like you said, and then I could eat it 🥰 because other than the raw eggs, it looked good. The second pie you made looked Heavenly...I love watching you cook so many delicious goodies and love your kitchen! Thank you for sharing 💖

Lemon Icebox GRAHAM CRACKER PIE CRUST 2 CANS EAGLE BRAND CONDENSED SWEET MILK 3 EGG YELLOWS* 1/2 TO 3/4 CUP FRESH LEMON JUICE Mix the juice, milk, and eggs* well with an electric mixer on high speed for 2-3 minutes. Pour into a graham cracker crust and chill for a minimum of 4 hours. Slice and enjoy! Raw Egg Consumption* If you wish to not eat raw egg yolks, bake pie in the oven at 350 degrees for 20 minutes and then chill. Tammy’s Meringue Tip if you want to use the whites: Use the 3 egg whites and beat them in a mixer on high with 1/4 cup powdered sugar and ½ tsp. cream of tartar until stiff peaks form. Top the pie and bake in the oven at 350 degrees for 25 minutes. Let pie cool to room temperature before refrigerating to prevent meringue from weeping.
