Copycat Cracker Barrel Meatloaf
INGREDIENTS:
2 pounds lean ground beef
1 small finely diced onion
1/2 cup finely diced bell pepper - optional
1 1/2 sleeves of crushed Ritz crackers
3 eggs
4 oz. shredded sharp cheddar or Colby cheese
1/2 cup milk
1 tsp. salt
1/4 tsp. black pepper
Topping:
1/2 to 3/4 cup ketchup
2 tbsp. brown sugar
1 tsp. mustard
*Mix above ingredients well
Preheat oven 350 degrees
In a large bowl mix the eggs, cracker crumbs, onion, bell pepper, cheese, milk, salt and black pepper.
Add ground beef and mix well just to combine - don't over mix.
Place meatloaf on foil or parchment paper lined baking sheet / pan.
Form into loaf.
Bake at 350 degrees F for 30 minutes. Remove from oven and spread and brush on topping. Bake for an additional 30-40 minutes or until the center is 160 degrees F.
Remove from oven and let stand for 15 minutes before slicing and serving.

Copycat Cracker Barrel Hashbrown Casserole
INGREDIENTS:
1 pound bag thawed frozen hashbrowns
1 small diced onion
1 can cream of chicken soup
4 oz. shredded Colby Jack cheese
1/4 tsp. salt
1/4 tsp. black pepper
Mix above ingredients. Spread lightly and evenly in a greased baking dish.
Bake at 350 degrees F for 45 to 50 minutes or until cheese is melted and sides start to turn brown. Let rest for 10-15 minutes before serving.
Enjoy.
