You completely misunderstood what happened with the 10 seconds. Gojo said give him ten seconds with the curse and then come back. Itadori let the curse come out for 10 seconds to fight him and when Gojo started counting the ten seconds were about up. Itadori was the one who stopped the curse not Gojo. It was a test to see if Itadori could really control the curse inside him.
