Yes Virginia, there is a method to turn a spoon on the lathe. Check out Lan Brady's method for turning a spoon on a lathe. Some people make a spoon in two pieces (a handle, and a cup), but Lan has a system for making the spoon from on piece of wood, and turns everything on the lathe. Maybe you want to find out how.

what kind of chuck is that that holds the spoon bowl when hollowing?

The chuck is "homemade." It's explained at time 20:47 in the video. He took pins from a cole jaw, screwed them directly on a chuck to form a gripping chuck. If you don't have cole jaws as a source of pins, you can get long screws that fit you chuck, insert the screws into various types of tubed material and create the same effect. Various folks in our club have tried various sources for the tubing, including closed-cell foam tubing you can find on amazon, plumbing tube, and fueling hose.
