Use some sun block, or get a long sleeve sun blocking shirt, or some of those sleeves that you slide on your arms to keep from getting sun burn.

I’m curious your thoughts on wind blast and if the bike gets kicked around in cross winds? I’m looking at the same bike but I’ve never owned such a lightweight bike

All lightweight bikes will get blown by the wind. It's sort of the trade off. But it's not dangerous or sketchy just a minor annoyance

Just buy a bike designed for that. You need the right tool for the job for something like that.
