normalmente en reposteria son hechos de pure de fruta con pectina azucar y glucosa y para fuertes usan cremosos o algun lacteo como crema para batir o queso crema, saludos.

No tiene armonia ni simetría, el emplatado tiene un propósito y tiene que ser parte del plato para evitar desperdicio de materias primas
