In this video, I will take you through the steps I take to smoke St. Louis Style ribs from start to finish in my propane smoker. Great video for beginners.
St. Louis Style Ribs Recipe
Items Needed:
St. Louis Style Ribs
Seasoning of your choice
Mustard
Container
Saran Wrap
Apple Cider Vinegar
Apple Wood Chunks
Pineapple juice 12 ounces
BBQ Sauce 12 ounces
Prepping Your Ribs
1. Coat Ribs with Mustard to act as a binder
2. Season your ribs to taste
3. Set in container and place in cooler over night
Creating Rib Glaze/Marinade
4. 1 to 1 ratio of BBQ sauce and pineapple juice set aside
Prepping Your Smoker
5. Set up smoker at with chips/chunks/charcoal
6. Add apple cider vinegar to water pan
7. Set smoker to 250 F
Smoking Process
8. Smoker ribs for 3 hours
9. Pull ribs out after 3 hours
10. Add the rib marinade/glaze and wrap them in heavy duty aluminum foil
11. Set ribs back in smoker with bone facing down for 2 hours
12. Pull ribs out after 2 hours and unwrap them.
13. Place back in smoker unwrapped for up to an hour depending on how hard of a bark you want on the ribs. The stiffer the bark, the longer you leave them (1 hour). The softer the bark, the less time you leave them (15 minutes).
14. 10 minutes before pulling them out, coat ribs with straight BBQ sauce

I am house sitting and this is the smoker that is on the back porch. I just made a run this afternoon and picked up two racks. Yellow mustard, apple cider vinegar, and filled up the empty propane tank. I figured if I was going to be going thru a day looking over the progress of the ribs, I should make some for when the owner arrives back home and thanks them for letting me try one out. Thanks for the upload.

How long do you preheat your smoker? And do you had wood chips during this time or wait until the meat is in?

I turn on the smoker about 10 minutes before to get it up to temp. Add chips when you put your meat in. By then, it should be hot enough to start smoking withing minutes.

Did you just put the iron skillet on top of the tray that’s there or did you remove the tray and put the skillet on top of the burner ?

No. Keep the tray it comes with. If you put the skillet right on top, the flame will not get enough oxygen and will go out on you.

I usually leave the vents slightly open. As far as chips, I would recommend you use chunks instead. They don't burn off as fast. With this type of smoker, I like checking it ever 20 minutes or so.

I have this same smoker. Going to have to try the Skillet method. Also how many times to you change the water pan in a typical smoke??

Water pan? That all depends on your cooking temp. You shouldn't really change it out. If anything add more water if it starts to evaporate too much.

I'm beginning with pitboss 3series electric smoker 30inch with wood chips I never smoke anything on any smoker I have pitboss 3series electric smoker 30inch with wood chips my baby back ribs was to dry and wasn't done my temperature is lower and higher and medium what I need to have my pitboss 3series electric smoker 30inch with wood chips temperature have to be on next time I smoke my baby back ribs

I would definitely wrap it after 3 hours in foil. Add apple juice, brown sugar, and butter before you wrap it for 2 hours. You may want to skip the last hour leaving it unwrapped to keep it as moist as possible.

I just got a Masterbuilt. I would have designed it with shelf guides in it!! Put handles on it. Not one.since i have 2 hands not 1 !! No gasket included!! I would have all swivel casters.easier to move!! Where is the xlarge thermometer on the door' ?? 😮

Do we need to change out the wood chips/pellets during the smoking of the ribs or just leave them the entire time?

For sure you need smoke when the ribs are not wrapped (the 1st 3 hours and the last hour). During the wrapped process (the 2 hours in-betwee), they are not needed if you're using propane/heating element as your heat source.
