How do they maintain their health? Even with exercise and controlled diet, my cholesterol is at upper limit. I wish I can like them at 50% level 😀

the consistancy of it and texture looks alot like "Pig feet"...which me being a country sounthern black man has plenty of experience with. Pig feet are delicious! so this is making my mouth water. LOL

Can anyone recommend a mild pepper I could use with lamb? I don't want to set myself on fire like Uncle does but a mild spice is fine.

I would Do it the hungarian way. Sweet mild hungarian paprika. It is sold in at least two types, the hot and the mild.

You can try Korean red pepper flakes they have mild or try crushed red pepper that isn't to hot if you use it sparingly.
