It’s always nice when people enjoy your food. That was a huge meat Department. I shred with my hands and I know I was wore out when I did those 4 Pork Butts, I could imagine do an 8 to 10, or even 20. Thanks for sharing

Hey Louis, this is an awesome video. That little pit did a great job on the pork butt. Some people do not realize how much work it takes to do a video like this but I certainly do. That meat store was really something with all the selection and quantity. WOW. I see why you go there. I can't imagine catering for big crowds and all the work that goes into it. You were the man for a day at work for sure. Good to hear it all turned out great. The co-workers will always remember it. Nice job on this one. Have a weekend

Phil N Florence thank you Phil. It was a long day but fun to pull off. The “meat store” here mainly caters to the local restaurants but the public can shop there as well. You won’t find prime grade meat there but it is choice grade.

The butts turned out juicy Louis! They also had some great color at the time you pulled and wrapped them! The Pit Boss has been getting a work out and definitely makes cooking the butts look easy! Thanks for the vid and the quick tour of the meat market.

why would you smoke anything before removing that char - crusted filled water pan on the bottom of your smoker ? That's nasty

Those looked perfect Louis. Wow that moisture was amazing. Lucky crew you work with lol. I’ve been finding lately it’s easier to shred with my hands. I put insulated liners under my nitrile gloves and it works great. That was a nice labor of love you did for your co workers. I have a picnic coming up at work too and may try that. Grill on Regulator! 🍻

I am wanting to buy an electric smoker because I like to set it and forget without the worries of keeping temp right. What would be your suggestion as far as buying an electric smoker? I really do enjoy all your videos as you do put so much into to them to educate us all. Thank you!

Thank you for watching. I will be honest I don’t have a lot of experience with true electric grills that have a element that heats up and you put wet wood chips on if that is your question - but if you are looking at a Bradley or something like that - the big thing is get one that you can control the temperature on. As far as pellet grills go - and some classify them as electric, it all depends on your budget. Pitboss - Louisiana grills are good starter grills where you can get their larger models at a reasonable price. Treager and Rec Tec would be the next step up with better controllers- then you can move up to Smith brothers, Yoder types which are top of the line as they not only have great controls but are hand made in the states and thicker metal. All grills have a learning curve but once you use them - they all produce great flavor. Hope that helps a bit and if you need more info - don’t hesitate to ask.

Cheryl Bunch what type of meat are you looking to cook / smoke? What is your budget? How big is your family that you will be cooking for? My opinion is if you want a good all around smoker that will feed a family of 4 and big enough for backyard gatherings I would say get a Pitboss XL. It’s easy in the budget. If you want a really quality smoker with top of the line controller and great customer service- I recommend the Rec Tec RT 700. The more I use this grill/smoker the more I love it.

In the beginning I didn’t spend much as I was trying it out. I love the electric smoker for the convenience but I have already went thru 2 name brands that didn’t live up to the hype. So now I am going to go with the Rec Tec RT 700 you suggested. Thank you again and my family appreciates and enjoys the awesome videos you put out for us! Big Smiles!

Hello I purchased this smoker today I am new to smoking meat .. can you please tell me why you wrapped it in foil and the a towel?

Hello Carlos. Welcome to smoking meat. So brisket and pork butts have a tendency to hit what is referred to as a stall in cooking slowly. This generally happens somewhere around 140 degrees to 160 degrees and they will sit at that temp for a very long time - hours even. One way to help pull them out of the stall quicker is to wrap in foil and what this does is to start cooking from the inside of the meat and less of the bark or outside, I also generally crank up the heat 25degrees at this time as well, once you get the meat to the desired temp - feel - wrapping in a towel and placing in a cooler will slowly drop the temp of the meat and preserve all the natural juices inside. You can let rest anywhere from an hour to 6 hours and still have hot meat. Hope this helps

I have been looking at purchasing a pit boss vertical smoker and I have been reading some of the reviews, which some are disappointing. I have seen a lot of reviews state that this smoker experiences wide ranges in temperature swings and isn't very accurate. For example, setting it at 250°, sometimes gets as high as over 300°. Is this true with your experience?

Wheelman Josh thank you for watching. I apologize for not getting back sooner. Yes I have experienced wide temp swings and I do wonder about the accuracy of the smoker. What I can tell you is I use internal meat temp and also the look of the meat as well as the tenderness and although you get swings - it seems to balance out and I have not seen a big time difference in how long a cook takes- the 3-2-1 method for ribs still come out great at 3-2-1. I do have another review video coming out very soon where I address the swings and another issue I had.

It does swing but as long as it's in the shade and you adjust the chimney top it doesn't swing much. If it's in direct sunlight and you're not adjusting the chimney however it will swing bad. Despite this the food comes out great

Set temp 225 - actual 325. Does that not drive you crazy? Used mine for the first time on easter and smoked a butt. Mine was doing the same, up and down. Made it hard to know when it was going to be done. Was doing an overnight cook and sat and watched it go all over the place (got a terrible night sleep). I'm coming from a Green Mountain with a PID so the fluctuations were within 10 degrees, if that. I bought a Rec Tec to controller to put in, we'll see how that does for me. Great video though man, really like watching your vids. You have much more experience than me so the temp fluctuations probably don't bug you, like it does me.

Trizzle thank you for the kind words. I had the door open a few times that that generally cause mine to climb in temp but it does seem to balance back down. Honestly this performs like I expected it to as a lower end pellet smoker. I am following a couple of ppl that have switched out the controller and might do that at sometime. I purchased it mainly for the volume you can get in it.

Hey Louis! Awesome cook! Hey I’ve seen from other videos you have a rec Tec as well. I’m in between a rec tec and a pit boss vertical. Any feedback on your preference of the 2? I have a nice Weber has so I’m not really looking to replace it. My next smoker really is going to be exclusively a smoker. However, I do like the WiFi capability of the Rec. Thoughts?

Thank you for watching Greg. If I could only keep 2 grills - it would definitely be a Weber kettle and the Rec Tec. The Rec Tec is 3 times more than a Pitboss but has the better controller and is a lot thicker. The wifi is initially harder to set up than I thought it would be but since then I have had zero issues. I have had the Pitboss throw error codes twice now as it Fed to many pellets into the fire box and basically snuffed out the fire - lucky I was out there both times and was able to power it off - let sit 5 minutes and restart with no effect to the cook- I would be hesitant to let it run all night without monitoring it. With that said it will hold a lot of meat and at the price I feel it is still worth it. I guess it comes down to how much you are going to smoke at one time and the price you are willing to spend. Hope that helps a little bit.

Louis at R shack BBQ Thanks for your feedback Louis! What I meant in my initial response was I have a really nice Weber Gas Grill and would like to keep that as our main everyday grill. Ironically I have a Weber kettle as well which where I’ve done most of my smoking to this point. What I’m looking for now is something that I don’t have to baby as much as I do with my Slow N Sear. I’m hesitant to invest so much in another big grill like the Rec Tec when I think I’d only use it as a Smoker. But I’ve read how good of quality it is and it would be the ultimate in convenience with the Wireless component. What is intriguing about the Pit Boss is how much capacity it has and it’s smaller footprint for storage. However, if it doesn’t work it does me no good 😀 Did you contact Pit Boss about your error msg and get a response? Do u know what the problem was (moisture)? Also if cooking side by side (ribs, pulled pork, brisket.,) which as the best flavor?? Thank you, look forward to your feedback again

Great video. I have been seriously thinking about buying the same Pitt Boss you have to complete out my collection. I currently have a 36" Blackstone griddle and a 22 inch Weber kettle. So Louis my question is does the Pitt Boss out perform your Weber Smokey Mountain in terms of smoke rings and consistent temperatures? I use the snake method of hardwood and charcoal in addition to a pellet smoke tube in my Weber. This is a cheat to get me out of buying a smoker. So you like the Pitt Boss over your Weber?

DOC Ohm thank you. I personally like the WSM but love the volume I can get in the Pitboss. I have a smoke tube which I have used in the Pitboss and a kettle. My wife is not a fan of a heavy smoke flavor and it seems that the pellet grills produce less of a smoke flavor and more of the rub and meat. I know this doesn’t answer your question so buy both-haha.
