When I make potato salad - instead of peeling the skin, I chip the skin off with a knife - oil and season the skins and bake them - 2 good snacks in one. They'd be good with oil and just salt with a dip too. Works well with any potato skin. Frying would probably work too, tho I haven't tried it. I've found that fried skins have a more bitter taste than baked skin, so that's why I haven't tried them that way. I like the baked potato vibe better.
