You know pizza is life when you have no intention of making 300 pizzas in one go, but still watch a 35 minute video about making 300 pizzas.

Hang on… in other videos you are using 5g of yeast for 300 flour and you dilute the poolish with the water and salt. On this video you use 5g of yeast for 10 kg poolish and add not doing the same process! I am confused

Man you work hard Vito. One rule in my kitchen when I make your pizza is that all my family has to call me “Vito”. I don’t answer to any name unless it’s Vito. Great job!!!
