I appreciate how important it is to have the house insulated, but I was sorry to see those beautiful chestnut beams covered up. Did you think about open-beam ceilings? (I know nothing about building codes and permits there.) Your project outdoors and indoors is a constant delight!

We do not cover chestnut beams (the big ones). Maybe they are covered in one place because of difficulty with space. If you think about wooden soffit in bedrooms - it is not a chestnut wood, it’s more random and we had to cover it because of all of the cables. We didn’t want them to be visible

I understand that you may not need heat in the bathroom(s) but what about ventilation ? Biggest problem we had in our old stone house in Liguria was humidity and condensation from steamy bathrooms and kitchen.

We have installed heat recovery ventilation in the building. We have an episode about it but we will sum up everything once again for sure when we finish the renovation

Have you seriously butted up the edges of plasterboard sheets without any support behind the joints? Never seen that done before! 😮

I'm not sure if I understand well your point but in every corner there is plasterboard frame. Everything is solid. Of course we do 2 layers of plasterboard sheets, but you'll see this in next episodes
