Looking for something different to cook for your family then I hope this what I cooked for dinner video gives you some inspiration on maybe some new ideas you can add to your meal plan with these budget friendly meals.
Chicken and rice casserole

Ingredients
3 cups diced rotisserie chicken or any other cooked chicken
10.5 oz cream of chicken soup can use low-sodium or Healthy Request; other cream soups can be used
3 cups cooked rice
1/2 cup sliced almonds or slivered almonds
1/2 cup mayonnaise or Greek yogurt
3/4 cup diced celery
1/2 cup crushed corn flakes see post for more topping ideas
2 tbsp butter melted
salt and pepper to taste
Directions
Preheat oven to 350 degrees.
Combine all ingredients into a greased 9x13 baking dish. I use a 9x13 because we like extra room for our corn flakes {more crunch!} but this recipe will fit into an 8x8 or 9x9 baking dish.
Mix up the ingredients right in the baking dish.
Pour cornflakes into a bag and crush away. They don't have to be crushed to dust or anything - just break them down into smaller pieces.
Sprinkle the cornflakes over the top of the casserole.
Drizzle melted butter over the top.
Bake for 30 to 40 minutes or until casserole is heated through.

Chicken enchiladas with white sauce

Ingredients
10 low carb tortillas or homemade keto tortillas
2 cups cooked shredded chicken this is about 2 large chicken breasts, pre-cooked add at least another cup of chicken to have enough for 10 tortillas
2 1/2 cups shredded Monterey Jack cheese add at least another 8oz block of cheese to go into the tortillas
3 tablespoons butter
8 ounces cream cheese
1/2 cup heavy whipping cream
3/4 cup chicken broth
2 - 4 ounce can of diced green chilies drained
Sour cream for topping
Cilantro for topping
Directions
Preheat oven to 350 degrees.
Precook the chicken or use rotisserie chicken, shredded. Set aside.
In a large saucepan over medium heat, add the butter, cream cheese, heavy cream, 2 cups of Monterey Jack cheese, diced green chilies, and chicken broth. Stir until smooth and creamy.
Use a 9 x 13 casserole dish, add about 2 to 3 tablespoons of shredded chicken and shredded cheese to each tortilla and roll it up. Place the tortilla face down in the casserole dish so the enchilada doesn't unroll.

Slow cooker crack chicken

Ingredients
2 lbs. boneless skinless chicken breasts
½ cup chicken broth
1 oz. packet ranch seasoning mix
8 oz. cream cheese, softened and cut into cubes
6-8 bacon slices, cooked and crumbled
1 ½ cups shredded cheddar cheese (from a block not pre-shredded)
½ cup sliced green onions
Directions
Add the chicken and the broth to your crockpot. Sprinkle the chicken with the ranch seasoning mix and add the softened cream cheese cubes to the pot.
Cover and cook the crack chicken for 4-5 hours on high or 6-7 hours on low.
While the chicken is cooking, cook the bacon, crumble it, and set it aside until the chicken is done.
Shred the chicken right in the pot. Sprinkle the chicken with shredded cheddar cheese, crumbled bacon, and sliced green onions. Put the lid back on the pot and heat it on low until the cheese melts.
Serve the Ranch cream cheese chicken with buns, tortillas, with tortilla chips, or on a bed of lettuce. Enjoy!
