12 boiled eggs
1/3 cup diced celery
1/3 cup diced chopped onion or green onion
1/3 cup sweet relish
2 to 4 oz. pimento drained
1/4 cup plus 1 T. mayo
1/2 t. mustard
pepper, salt
Bacon Chive Deviled eggs
4 boiled eggs
2 T. mayo
1/2 t. mustard
1 T. sweet relish
3 slices Crisp cooked bacon diced
3 T. chives chopped
salt
pepper
Baked French Eggs
12 eggs
salt pepper
1/2 cup heavy cream
8 oz. grated parmesan
425 7 minutes
Easy Pickled Eggs and Beets
8 to 10 boiled eggs
16 oz jar pickled beets
1/2 red onion sliced
1 cup red wine vinegar
2 cups sugar
1 t. Pepper
1/4 t. garlic powder

I once heard a health professional say that if you want to eat healthy and live longer, eat like your grandparents and great-grandparents. That means to eat fresh, unprocessed food. We now live in a world of convenience where chemicals and preservatives are added to everything. When I was growing up on a farm, we had corn ground into cornmeal. We bought flour, sugar, rice, and some staples, but almost everything else was raised by us. We had fresh milk, homemade butter, eggs, and beef in the freezer. My mother canned and preserved fruits and vegetables. Almost everything was used: like watermelon rind and grape hulls. Summers home from school were spent working hard, but I am so thankful for having that experience!!!

I’m 61 years old I eat minimum 2 eggs every day( have for years) not including what we use in recipes, just had my annual check up , again my cholesterol levels are perfect. My good cholesterol levels are where they’re supposed to be my bad cholesterol levels are almost “exceptional” according to to doctor, same every year ! And home eggs are higher in minirals vitamins and protein, that’s a scientific fact 🤷🏻‍♂️. So eat some eggs do your body some good 🙏🏻

I eat my share of eggs. I am 77 and my labs come back in the normal range. Beets and pickled eggs, oh Lord I am in heaven. Don't apologize for eating two super foods!!!

Your exactly right on that. I have a friend 72 years old that still believes what ever the doctor says it the gospel he tells her to not eat many eggs in a week cause the yolk has too much cholesterol so when she fixes her eggs she only eats the whites. Being a person that has been on Carnivore for while now I can't make her believe that eggs will not hurt you. That is a big fat lie that doctors are pushing and people are just not getting it. Eggs are very good for you and your cholesterol.

When I was in grade school I would beg my mother to make me an egg salad sandwich for my lunch box. I loved it with a little onion, too. Those were the days. A kinder gentler world! This was in the “50’s”. A different world now! Blessings!❤

Born and raised in Arkansas walked a mile to school every day. Had a fried egg sandwich or piece meat and a biscuit in my lunch never got tired of it. We were poor to pay attention so that was a welcomed dinner. Good old days. I’m 86 now. Seems like yesterday. Have a wonderful day.

Eggs are the best protein you can have. I have had eggs every day and I am 76 going on 77. I did research on making my own dog food and found out about eggs!!!! The dogs get an egg every day along with my home made dog food!!!!! I love potato Salad with a ton of eggs in it..... Yummm. Thank you my dear❤. Custard, and a good quiche!!!!!

I paused this video right after the French eggs and went and made some in my air fryer. My husband raved about how good they were. I added a little lemon pepper on mine. I told him I wouldn't mind making those again and he said" Oh, I hope so!" I think he really liked them. LOL😆 Thank you so much! And I have always make my pickled eggs in pickled beet juice - it's a family tradition! We love them that way!

I’m almost 82, and eat at least 2 eggs every day and always have. We never added anything to ours except mayo and mustard and salt and pepper. Definitely no pickles. When I married my husband, I made him some egg salad sandwiches. He said, “where are the olives,”. So, I got the olive jar out of the fridge. He just looked at me. He said he would be happy to cut them up and add them since I must have forgotten to do it. Well. I had never heard of olives in egg salad. But, now, I can’t eat it without them. Great ideas. Great video. Thanks.

Good to see the truth that eggs are good for us. 😊 Our family even put the peeled hard boiled eggs in vinegar, beet juice, salt, onions, sugar, and pickling spices. We did this when we had an abundance and the eggs kept real well.

Thank you , mrs lori , My grandmother lived to age 96 and she only ate Butter, real bacon , farm eggs 🥚, everything you could think of she canned . I was blessed to be raised by my wonderful grandmother who lived through the Depression, but asking her how It was ? She said they didnt even notice as they lived off the land . Im proud im a fugal woman, that never needed materealistic items , and taught my children the same . Those jones are hurting right now, while we have a garden , meat and love to sew . My sons are 38 & 34 April ann passed at age 19 . I take one day at a time and appreciate all your wonderful content . Big hugs to you & Mr.danny and yalls family . I just came in from pruning my toamato plants , 1st year we got 3 wonderful volunteers. They grew inbetween my onions 🌰 They are drying now in our screen room. Every year I freeze some eggs in muffin tins then pop into freezer bags 😊 I also cook some scrambled eggs and freeze for us and our chickens too 😊. I am the one in our large family that has always made the Deviled eggs for special occasions 😊 hubby and I love hard-boiled eggs cut-up in my homemade potato salad 😊

When I have too many eggs I always boil up a few dozens , mash them up into tiny pieces , shells and all and when cooled feed them to our chickens . They gobble them down as I stand watching them appreciate what they give to my husband and I . They deserve to share in the abundance of goodness 🥚🥚🥚🥚

I just finished a plate of potato salad. I used hot pickled eggs in it. The dressing was homemade with my eggs😊 scrambled eggs for breakfast 😋 My broody hen hatched her 1st chick, 7 more to go. I am raising 11 American Breese and 6 backyard chicks from the incubator. I have another 11 in the brooder. Chicken dinner in the fall. Eggs Benedict is a delicious meal too. I LOVE eggs. I usually just put celery, eggs and mayo in my egg salad. I like to eat it on crackers. If I'm eating fried or poached eggs, I want the yellow to be runny. I don't eat beef, pork or dairy (except butter)...NOT because I dislike it, but because it HATES me 😭 SO eggs are an important source of protein for me. Best way I heard, was to crack an egg into a Non stick muffin tray. After they are Frozen, put them in Ziplock bags. Good for Over a Year.

I remember my Grandpa's old metal lunchbox with the thermos. Grandma would pack his lunch everyday. Grandpa worked for the city/county, maintaining the county roads. My Grandma worked in the lunchroom at our Catholic school. Such simpler times. Another fine video Miss Lori. All the recipes looked delicious too.

In my pickled beets eggs, I put a sprinkle o cinnamon and nutmeg in my pickled beets juice with the vinegar and sugar to heat up on the stove. Yummy!!!

My husband and I like creamed eggs over toast.. Make a medium white sauce, chop up a half dozen boiled eggs to add to the sauce. Season with salt and pepper. So good for a quick meal.

Quiche me baby, I'm a fool for eggs! "The incredible, edible egg!", I remember those ads before they started to discredit eggs! Eggs are like seeds, not only can egg nourish us but a whole chicken that nourishes us in the end. The seed can grow into a whole plant that can give us nourishment for years, just know it's origin!

A friend and I were just talking about eggs not long ago. How they have good fats, and don't have to worry about the cholesterol so much. In fact I just made an egg casserole today for my daughter, since I'd be gone the last week. My pap is still alive and he ate many eggs, only green veg he ate was peas, lol. He does have dementia now in his 80s. He and my dad always took the thermos and lunch box to work. Good memories. 😊 I've not had egg salad in forever. Looks great! Love and blessings. 💖

Back in the early 1990’s. My grandpa, who was in a nursing home, farmer his life and in his 90’s, eating eggs and bacon his whole life was told he could no longer have eggs and bacon for breakfast.

I had a similar experience when I took my doctor a dozen brown eggs on my last visit and she was so happy to have them but when I told her I eat some almost every day in some form , she chided me saying “ oh be careful that you don’t eat too much of them or your cholesterol will rise .”

Ms. Lori, I just want to let you know that I really enjoy your channel! I, too, enjoy gardening, cooking, and canning. I was born and raised in Springfield, Mo. and I'm pretty familiar with northern Arkansas. Beautiful state for hiking and floating. 24 years ago my husband and I moved to northern Missouri where we have raised our family. I eat an egg or 2 eggs every day! I just love them and breakfast is my favorite meal. I would love it if you would give us some more egg recipes.i don't have my fridge working right now but my freezer works. So I keep them in there and make scrambled eggs in the we microwave. Years ago, like 35, I had a breakfast casserole at a brunch made with deviled eggs. It was so good. I still have the recipe in my treasure box. Of course it had cream of something soup involved.

Love ❤️ this video. We grew up eating breakfast for dinner, and I still love it. I would like a video on freezing the eggs 🥚 and if you Water glass your eggs 🥚. I want to try that with our fresh eggs. Thank you for sharing Ms.Lori ❤!!! God Bless You and Mr. Brown!!!

Growing up we had egg salad with chives, I mean a lot of chives, and we ate it with pan fried potatoes for dinner. So good.

You have the best garden I have seen. And I’ve seen and made a lot. We grew up with chickens and eggs but the old people lived long lives on eggs. I am not a vegetarian but I very seldom eat meat because I don’t like it. I eat all veggies cooked anyway but I especially like spinach Kesha.( can’t remember the spelling)

Thanks for the recipes! We as well believe eggs are good for you. You can't beat egg salad along with a fried egg sandwich. In the summer I love adding a slice of tomatoe from the garden. I do try to keep some in the freezer as well. We get about 40 eggs a day because the rest of the flock are either gone broody or already sitting eggs for our spring chics so we can always rotate the older hens out and kill the roosters. We are the age of you and Mr. Brown so we as well can't eat but so many eggs, but our children all live on the farm with their families so they enjoy the eggs, then we sell. we never had A/C in our home so, hot summer days was light but filling meals. I loved to make egg salad put inside a quartered garden tomato, place it on bed of lettuce and crackers on the side, served with saltwater & vinegar cucumbers with fresh dill & big glass of sweet sun tea. ...also used chicken salad or tuna salad... :D

Miss Laurie, you are so beautiful. Every time I check in on you two and I get so peaceful. I am 66 years old and you remind me of the sweet simple times which warms my heart. I love your home too. I remember Mr Brown having Amish builders work on your home. I was wondering if you know how I can contact an Amish builder to repair my roof in Miami, Fl. I just don't trust the roofers here, and the good ones don't speak English. I wish there was a directory of Amish workers to access. Today's video was right on target, I love egg salad.

There are Amish throughout the USA. Some of them don`t have electricity or electronics, so you will have to ask friends.

I used to make a tuna egg pie with mozzarella cheese and Italian seasoning, yum I had forgotten about it, think I'll make one for supper tonight. And when I had an abundance of eggs I'd cook bread pudding for dessert.

I used a single pie crust, beat 6 eggs. Can of drained good quality tuna in veg oil. Salt, pepper, Italian seasoning to taste, a cup and a half of shredded mozzarella cheese. Bake at 350 til eggs are set. Serve with a salad.

When I was a kid me and my grandparents on a hot summer day that evening instead of heating the house up cooking, we cook a skillet cornbread at noon and we have milk and bread or buttermilk and bread and supper and it was really really good. Enjoy your videos Lori. God bless you.

I love watching you and listening to you talk. You are so amazing. I could listen to you all day long. You are a very smart homemaker. I love breakfast for supper. My uncle used to raise hogs, sugar cured country ham, homemade livermush, and good ole sausage. My mother used to cook country ham, grits, red eye gravy, cantaloupe when in season and home made biscuits, omg was that good especially in the winter. We used to boil a egg, slice it, on fresh bread and mayonnaise a little salt/pepper, a great fast meal or even deviled eggs was good. I love a good egg sandwich, and it is a great meal.

I love the recipes. I've never tried pickled eggs, but I really love pickled beets, so I have to try the eggs. Also, the baked french eggs I've never tried but they have to be good. So they are something else I have to try. Thank you so much for sharing.

I have been buying fresh eggs from a local farmer for quite a while now, and when I went to the doctor all my labs came back in the normal range and kidney function was perfect. I normally bought 6 dozen a month and last month we ran out. This month I bought 9 dozen, and my son can eat 8 eggs a day and he is not by any means overweight, when I was buying store bought eggs, we always had some left over. You can really tell the difference in store bought and home grown. Home grown eggs has a much better flavor. And i have watched you for many years now and you taught me how to Pressure Can! And I find markets where Farmers go and buy in bulk to put away for winter months. I love you and Pa Brown and appreciate you two. God bless and keep teaching.

The boys used to hate us girls bringing egg salad sandwiches to school for our brown bag lunches! I loved it so much though that I took the jokes from them anyway. Still love Eggs anyway they can be eaten! Thanks for the nostalgic reminders, Ms Lori! Also for educating me about Laying Hens. 🥰😇

My first year of school I recall the odor of the coat room. Everyone had to bring a lunch box or bag and the aroma from the lunches permeated the air. Everyone had to bring hard boiled eggs or egg salad on bread at least twice a week, so the coat closet was one of my favorite memories.

My mom was a nurse when l was younger. She worked 3-11 and would come home and turn on a skillet, crack an egg into it and go get into something more comfortable. Then as she came back out her egg was almost done and she would make a piece of toast and coffee. That was her dinner. I still love egg salad, l use sandwich spread when l can find it, and sometimes fry a few pieces of bacon, cut them up into it. Just got to have bacon.

My grandparents ate sausage/bacon, eggs, biscuits and gravy every morning and both lived to be 101 years old. They were farmers who worked very hard and got lots of exercise every day!!

Your grandma's egg salad is pretty close to 26:20 my mom's. Instead of using sweet relish, she uses a combination of mayonnaise and Miracle Whip to add a little sweetness. Mr. Man makes egg salad like your recipe and uses chopped bread and butter pickles and tuna for a yummy tuna salad for sandwiches or salads on a big bed of lettuce. We love bacon! Why have we never thought of adding crumbled bacon to our deviled eggs??? Yes please, I would love to learn how to freeze eggs, too. We don't have chickens and would love to learn out to store them for long term. You are the best and bless your heart for sharing your family recipes with us.❤

My grandpa lived to 102 and he ate fried eggs every morning and either home cured bacon or homemade sausage. He would make a pan of biscuits every morning. My grandma and grandpa also made either flour graveyard or red eye graveyard. They grew all their own vegetables, canned everything and processed their own meat. I helped at hog killing time. I would scrap the hair off of y he hogs so grandma and my mother could make pork rinds. So many memories of how hard they worked .

All the egg dishes looked delicious. My twin sister used to put deviled ham in her deviled eggs and it was so good. I lost her 8 years ago. Haven't had them since.

I like olives in my egg salad! Your deviled eggs look real yummy!!!! We ate the beets, so I just put the eggs in the beet juice. Didn't add onions. I'm giving them a few days before I taste. Take care!!!

My mother had a soft boiled egg and a piece of toast for breakfast every day. As long as I can remember. I was just telling my husband I wish I would have paid more attention. She would just lob the top off quick clean cut. No egg shell shards! Lol

I’ve never made the baked eggs but they look so good! Pickled beets and eggs are one of my favorite things. I’ve never tried it with brine… I’ve always thrown the eggs in the straight pickled beet juice. Always learn something new. More egg recipes please.

I am 75 and eat eggs almost every day of some sort. Eggs are awesome and my husband and children think so also, oh I better mention all of my grandkids love eggs too.

For late breakfast/early lunch (and leftovers) I made a Fritata using water glassed eggs, spinach, ham, Pepper & Cheddar cheeses, salt & pepper baked in my cast iron pan. Yum yum yum. Love your videos. Thank you!

Ina Garten made French eggs and were delicious. She mixed parsely, fresh thyme with the Parmesan. She added fresh garlic but I chose to omit. Such a perfect recipe and meal. The thyme really makes it! I baked 3 eggs in a ramekin with ingredients. Yum.
