1. MANGO MOUSSE CUPS (makes 4 x 220ml cups)
100g Digestive biscuits / graham crackers
30g melted butter unsalted
350g mango pulp (150g for plain mango layer + 200g for cream layer)
300ml whipping cream (minimum 33%) (200ml for mango cream layer + 100g for vanilla cream)
1 tsp sugar
1 tsp vanilla bean paste or essence
candied cherries and fresh mint for decoration (optional)
2. MANGO PUDDING (makes 6-7 mini puddings)
70g (1/2 cup) cornstarch US / cornflour UK
350ml (1 and 1/2 cup) milk
100g (1/3 cup) mango puree
50g (1/4 cup) sugar
pinch of salt
3. MANGO CHEESECAKE SHOOTERS (makes 10 x 90ml cups)
80g (10 biscuits) Lotus Biscoff (or any other biscuits)
15g (1 tbsp) melted unsalted butter
250g chopped mango (fresh or frozen and thawed)
150g (2/3 cup) cream cheese (such as Philadelphia) or Mascarpone cheese
