My friends and I invented a cocktail that we call a "Landmine," which is fig flavored Redbull, Ouzo or Rakija, and either a shaving of ginger or a splash of ginger ale. The name refers to the fact that it is high energy, tastes like something that came out of the ground, and contains a flammable substance found all over the Balkans.

Interesting you say "tastes like it came out of the ground" bc when I tried the fig red bull it was one of the earthiest things I've ever tasted. Matcha is just exactly what you described - green tea (traditionally steamed, which is how japanese green teas are heat shocked to shut down the temperature sensitive enzymes that cause the oxidation, whereas Chinese greens are pan fired for a less grassy, vegetal green) and milled ultra, ultra fine. Caffeine wise, green tea has very low bioavailability of the caffeine to be extracted in water, if I recall, it's because tea binds it's caffeine differently to coffee, but I did do a dichloromethane extraction in lab once on green tea and coffee and per gram, the tea was about 8% the level of coffee. However, when you eat the whole leaf in matcha, you are able to extract nearly all of thr caffeine in the leaves, so a serving matcha has about as much caffeine as a similar serving of coffee. But I've only done caffeine extractions in lab a few times. Dichloromethane is great at pulling out all he available caffeine (it's an industrial decaffeinator, steam also works) but it'd be fun to try matcha sometime.
@paulhammer4941
@paulhammer4941 Жыл бұрын
Even more important than the processing of Japanese tea is the growing. Japanese tea tends to come from young plants grown under heavy shade whereas Chinese tea tends to come from older plants grown in rocky soil in the full sun. The young age of the plants and the lack of light lead to an enormous increase in L-theanine and other compounds that impart the intensely salty, soupy, umami-rich flavor often associated with Japanese tea (particularly sencha.)
@colinmartin9797
@colinmartin9797 Жыл бұрын
@Paul Hammer oh yeah forgot that - but the supwr shaded and super young leaves part is only for matcha, really. Most sencha is of the same shade and age as Chinese green teas. Only matcha gets the youngest buds and is shaded for weeks prior. I'd be interested in doing an isolation and sequencing of the genomes of the various teas because L-threonine is not really shade dependent (it's believed to be made in the roots) and is a major component of all tea flavors, it's actually highest in yellow tea, a Chinese varietal. The grassy notes most associates with sencha come from steaming as an enzyme deactivator, and the racemic threonine should be more present in pan fired teas. But it's also just a lot of marketing. A lot of food science, particularly around specialty foods, is more speculation than hard lab science The main flavor difference is in the heat method used to stop enzymatic oxidation. I've tested this myself with young buds from a Japanese tea Camilla I have in my yard - I took a handful of young buds and steamed half and pan fired half. The difference was really obvious, with the steamed tea being Grassier and more vegetal and the pan fired being earthier. Home made tea is really fun! This year i want to try making oolong and black.

@@colinmartin9797 yeah but supercritical CO2 can be easily tuned in polarity, can't leave any residue so less tests needed, it's cheaper, inert and non flammable... Maybe the issue is an apparatus for such large scale processing and older plants can't just switch as easily

From what I understand, caffeine comes off coffee grounds into water fairly easily. You get 99% of the caffeine with the first flush of water. What you get steeping the water in the grounds is taste and layers of flavor. More coffee beans and less water = more caffeine.

COLD BREW CLARIFICATION: the ratio of coffee to water is generally always around 1:4 (also cold brew technically has the most caffeine for a standard coffee drink, but drinks like americanos and lattes that might have 4 shots of espresso often contain more caffeine. i think the thing is, people drink cold brew quickly because it's easy to kinda chug it, so it hits a bit harder+there's less milk to dilute it in the stomach)

@@7letters4letters49 if you take the average of all the hot brewed coffees you get approximately 27 milligrams of caffeine per fluid ounce. Even though that estimate is high (thanks to Death Wish and Black Insomnia), this means drip coffee has nearly one-third the caffeine content per fluid ounce when compared to espresso. The average of all the cold brews comes to about 26 milligrams of caffeine per fluid ounce (30 milliliters). This puts it directly in line with hot brewed coffee. But yes obviously these are not consumed in ounces so if you drink 3 cups of drop coffee or cold brew you will have more caffeine than an espresso. However for the purposes of cocktail we're only using 1 or 2 ounces

As a lover of jagermeister you have no idea how excited I was when I finally tasted absinthe and it tasted exactly like what I wanted. Jagermeister tastes like Christmas to me. It reminds me of old fashion hard candies made of spices and anise and such. Absinthe from my perspective was like someone made something with less sugar and more alcohol just for me.

Hot dang this reminded me of a drink people used to have on a local Grafitti/Vandal hangout called "Veneno" (literally "Poison"): You take a 500ml cup, fill it with ice (or coconut water ice cubes) and then equal measures of cheap energy drink and bottom-shelf vodka. You can drink alone if you want to get dangerously fucked up, but ideally you sip and pass along your friends.

I dunno, I favor Lo-Carb Monster over Red Bull for my Jäger-Bombs, also I tend to pour the energy drink over a orange peel in the glass to infuse a more bright flavor without being overkill and that is the Simplest complex Jäger-Bomb that I still love into my 30’s as a treat. Edit: I Would LOVE to see a THC Infused cocktail episode, Thank you for including it in your script to mention as the way you put it made it Just that more wanting to be seen.

I would be really interested (based on your playing with the elevated jager bomb) to see what you could do with a different energy drink. My personal preference for energy drinks is actually NOS, because I find it to be one of the least cloyingly sweet energy drinks out there. Strong notes of orange, I feel like. Heck, my usual morning preparation for it is to take one of my blender bottle cups, fill it mostly with ice, add a couple dashes of Scrappy's orange bitters, and then add the can of NOS. The bitters really do a lovely job of rounding out the flavors of it, along with the dilution you get from the ice. So, I wonder what kind of "full" cocktail work you would be able to come up with for it. Also, funnily enough, my current favorite coffee is from Chiapas, too! It's from one of the local roasters up here in the Seattle area, one called Tony's. It's a medium roast, and when I saw tasting notes of almond and chocolate on it, with a creamy mouth feel, I was sold. Also, my chocolate bitters of choice are Scrappy's - as ones that are easy to get hold of here. I've tried some others, but they were too... floral. Really bothered me. Scrappy's has a lot of good cacao notes to it. Great even on a coca cola... but I may have to try them on ice cream... also will have to look into the Angoustora chocolate bitters...

Afterparty idea: Greg looks up and attempts some tricky drink garnishes (like the citrus peels that are all fancy). He seriously needs to up his peel garnish game, and watching him try to learn after half a dozen drinks would probably be very entertaining. Also, are my mother and I the only two people on the planet who absolutely despise sugar in our coffee? I don't even like mocha flavored things because to me sugar and coffee don't taste good together AT ALL.

I don't mean to be rude by saying this, but it's probably a really bad idea for Greg to be fumbling around with a peeler after "half a dozen drinks". He could seriously hurt himself (people get their fingers in the peeler and it is not pretty). I think there's a difference between drunk Greg carefully doing one simple peel versus drunk Greg trying to do some fancy trick, that's a recipe for disaster. I would really love to see your idea with sober Greg though!

@@stephsaguudefan1753 Yes. I do watch the show. You're comparing things that he knows how to do easily when drunk (because he's also done it a million times while sober) to things he would actively be learning how to do. I am not trying to pretend Greg is incompetent. I am saying that there's a difference between something well-practiced and simple vs. something completely new and supposed to be fancy or more complicated.

I know someone who uses lab equipment to make a hellacious triple-brewed vacuum-extracted cold brew. She calls it Event Horizon, and it clocks in at around 220 mg. of caffeine per Oz. Normal cold brew has about 11mg per Oz. The recommended daily limit for caffeine intake is 400mg. Adding a shot of this stuff to an alcoholic beverage is guaranteed to make a very eventful night.

Matcha is the very top tea leaves of Japanese tea plants that were stressed by being shaded for a few months before harvesting, doing this triggers the tea plants to concentrate more their polyphenols (mostly catechins), plant vitamins, caffeine, chlorophyll, and l-theanine into the top leaves. These SPECIFIC leaves are then processed largely like regular green tea and then powdered.

A little while ago I came upon my own sort of "Elevated" Jaeger Bomb that paralleled yours in a way, although it was pretty simple. Same as your train of thought, I wanted to cut the sweetness of Jaeger, so I decided to just use Ouzo instead for a dry anise flavor. Since I had also recently gotten into Ouzo lemonades, I thought it could definitely use some citrus too; 2oz Ouzo 1 1/2oz lemon juice 3oz or so Red Bull, idk I kinda just pour to taste lol
