We Tibetans don't fry momo stuffing when preparing cheese or veg momo. But frying the veg stuffing makes the momo tastier! Once I tried frying the stuffing when preparing alu momos. It made great difference in taste! I started frying the stuffing after seeing videos like yours where veg stuffing is fried. And raw or semi raw pumpkin makes great veg momo!

I want to share one experience of momos , Once I make the soya momos and when I ate them I said to my mother they tastes very bad , actually the taste of stuffing was bad , the outer covering was good. And no one ate that momos and on next day my mother gave that momos to some hungry dogs from our town , my mother began to laugh and she called me and said, " See even dogs are also not eating your stuffing , they are just eating outer covering of momos." From that day I became scared for making momos 😭😭😭

Try to make it again. Because no one is perfect, you should try it again by watching the recipe correctly. When I tried to make a chutney the whole grinder blasted and I had a fear of using the grinder. After 2months I overcame the fear of using grinder. At that moment my mom laughed at me saying I can't make anything. But in two months I showed her that I can cook too. So never lose hope
