BUDGET RECIPES:
Chorizo Breakfast Casserole
Saute Onions and add chorizo (cook to 165). Add 1 dozen eggs to a bowl, whisked with 1/2 cup cheese, salt and pepper. Mix all ingredients together in baking dish. Bake at 350 for 15-20 minutes until fully cooked.
Stuffing Bake
Add desired amount of chicken to a 9/13 baking dish. One can cream of chicken soup on top. Sliced sharp cheddar cheese on top. 1 box stuffing mix on top. Cover with aluminum foil and bake @ 350 for 20 minutes, remove foil and bake additional 20 minutes.
Black Bean Soup
Rinse & drain 1lb black beans. Soak overnight. Chop 2 cups carrot, 1/2 bell pepper and 1/4 onion. Saute all veggies in large pot about 10 minutes. Add 4 cloves of garlic stir for 20 seconds. Add beans, 8 cups chicken broth, salt and pepper, and bring to boil, cover and let simmer 2-3 hours.
Chicken Noodle Soup
Cook two chicken breasts, then chop or shred. Place aside. Chop carrots and onion then saute in large pot for 10 minutes. Add chicken, salt and pepper, 6 cups chicken broth. Bring up to boil. Add pasta noodles until cooked through. Serve and enjoy.
Pinto Bean Casserole
Rinse and drain pinto beans. Cook according to package. Cook one cup brown rice according to package. Saute bell pepper and onion. Add rice, pinto beans, diced tomatoes, tomato sauce, salt and pepper to a 9/13 baking dish. Add desired amount of cheese on top. Bake at 350 for 25-30 minutes.
Sweet Potato Macaroni
Poke holes in sweet potato. Soften in microwave. Cook 8 ounce pasta noodles. Cook two chicken breasts on stove. Once sweet potato is steamed, peel and mash. Add milk, cheese, salt and pepper and mix until creamy. Drain pasta, mix in sweet potato and chicken. Bake at 350 for 10 minutes.

Try your grits with a bullion cube, cheese, or a little homemade gravy. Another cheap meal we do is chicken with rice and cream soup in the oven.

Look in the hispanic section for spices. They are SO cheap and honestly better than what you find on the shelves in the regular spice section.

I've noticed that too! Same spices in different section and brand can be a huge $ saver! And they seem to be fresher. Idk maybe because they get bought faster and restocked more often??? Great tip!

🎉thank you for that. Even if it were not exactly healthy she said this an emergency situation. I guess the naysayers have never had to choose between electricity or Medical (or such) and effing feeding your family. I appreciate these videos. I share them with people in my community who are having a hard financial time. And I share these with young parents so they see how they absolutely can cut corners and put a little money away to build a savings.

It also pretends that lots of people don’t already eat this way anyway (regardless of budget) or far worse; I know my friends did, their diet choices didn’t have much to do with what they could afford.

Wow, some of these comments boy. YES, we CLEARLY see there are no vegetables or “leafy greens” 🙄 Like the title says it’s for On an EMERGENCY BUDGET. Myself and sadly sooo many other have experienced actual hunger and I rather eat high carb unhealthy meals and get more for my buck than not eat at all for a few days because I don’t have enough food to last the week or month. Of course this isn’t a long term solution to eat like this for months or years.. but in times of true need this is a super helpful video and I thank her for making it god forbid I ever hit true desperation and hard times again (which I pray won’t happen) I will keep this video in the back of my mind and saved. Regardless if there’s “no leafy greens”. Everyone talks about eating healthy and obesity in America yet, for example, a LB of fresh spinach, can cost between $3-$5 depending where you go but I’ve seen a LB of pasta for as low as $.80 in my area personally. Soo 🤷🏼‍♀️ and I get that at the end of the day pasta is easier to manufacture and cost of goods is significantly lower, however.. it goes back to the fact that there’s sooo much push in America to eat healthy and switch the way and things you eat but sadly a lot of us are just focused on eating at all and that’s just a reality.

Like, if you have the luxury to really choose what you eat, and not just have to get the cheap stuff or limited items because you can't afford the healthier and better options, then you are doing better than most. It's unbelievable that people are mad at this video, when it's so helpful. They are either kids or people who have never struggled in their lives. Thank you for saying this!

You got great deals at Wal-Mart, however, if you get some fresh veggies, and homemade chorizo, etc. instead of so many canned goods, you could have saved even more money. 😊✌🏼

I think about Thanksgiving coming up. I LOVE sweet potatoes & yams. Would be great to do as a meal the day after, using the turkey, sweet potato and macaroni dish.

Please please PLEASE do an updated budget shopping video with these current 2023 grocery prices! 🙏 They are so helpful. It’s scary hitting the store these days and trying to make food stretch from paycheck to paycheck. These budget videos have helped me these last two years being a single mama with only one income. Maybe a budget friendly kid menu video? Still healthy but things a little one won’t be intimidated by. (My daughter does not do spicy food or sweet food!) Just know, these videos help a lot of us and I’m thankful you share your skills with us. ❤

Thank you so much for trying to help people stretch their food dollars. Inflation is hitting so many people hard. Also there’s a lot of young people who have lost family recently or been at odds with their families and never learned how to cook, videos like yours make all the difference in the world for someone like that. When my Daughter was younger, I would take her grocery shopping. She was a year old. We would bring one really thick comfy blanket and put it on the grates underneath the shopping cart. She would bring her stuffed animal as a pillow and another blanket to cover up with and we'd make her a little bed underneath. She would crawl in and every time she would fall asleep. It became such a routine- it became her nap time. She's 22 now and has moved away. I miss those days.

You could have saved a third of the chorizo for the pinto bean casserole and even bought salsa instead the tomatoes and used taco seasoning. I love all your ideas. Thank you 😊

I’m a SAHM with a very hard working husband and we STILL often struggle (who doesn’t?) But, when money is extra tight, I just do breakfast for dinner; eggs, pancakes, corn beef and hash (in a can). Thank goodness we love breakfast food! Stay happy and well everyone!

I feel your pain. We’re a family of 8 living on one income. Groceries are easily the biggest part of our budget. I’m so thankful my preemie isn’t on formula anymore!

My grandmother who was from the depression. Would crush up salting crackers in her eggs that we got from the chickens in the chicken coop. That extended the life of the eggs. That actually made it more filling and we couldn't tell honestly when the product was done. She also added vinegar to the ketchup bottle. People from the depression know all kinds of tricks to get food

French toast cups: Pack of bread Break up bread throw in mixing bowl 6eggs 2cup milk 1tsp vanilla extract 1Tbsp cinnamon 3tbsp sugar Mix in small bowl then throw over bread and mix. Divide into 12c Muffin tin Bake for 20 min at 350f Serve with or without syrup Freeze individually or refrigerate for up to 3 days

Someone in an emergency need-to-budget situation could EASILY make these 6 recipes stretch for 60 separate meals. The people complaining that its click bait are missing the point. (Also, Its very clear in the first minute that "meals" in context mean "servings," not separate recipes, the people complaining just have nothing better to do with their lives than nit-pick) These are obviously struggle meals and if youre struggling you are gonna be consious about portions. If you are complaining about these down-to-earth practical cooking ideas just know you are NOT THE TARGET AUDIENCE

This is wonderful honey, keep up the good intentions. There's so many around our country that need this information. I'm a senior living in sw Florida on a very limited income. And believe me, there's alot of us here just in this state alone. Our Mobil food pantries are very busy. If I could work I would but my arthritis is beginning to get the better of me at 66. So I just wanted you to know that people are watching your videos even if they forget to hit the button!

It's easy to understand if you don't like what's she's making than don't make it. She's not forcing you. Also, if you don't want to use specific items she is then choose your own. How about props to her for even trying?

As someone that has cooked all my life, may I make a suggestion. Please switch to a silicone spatula for your meat. Wood picks up bacteria from meat and eggs. Unless your soaking your wood spatula in vinegar and hot water after each use. Especially since you have your adorable daughter to cook for. Thanks for your videos, I enjoy watching them.

I used to get to take home left over sweet potatoes from my restaurant job. They were already baked. I would wake up early the next morning, mix the sweet potatoes with Bisquick, milk and a bit of brown sugar and make pancakes out of them. Sweet enough that they didn't need syrup so my kids could take them as an on the go breakfast or put them in lunch boxes with hard boiled eggs, a yogurt for a yummy lunch.

@@shagrynpoiseen11 They are and they have to be better for you than just plain pancakes. Sweet potatoes have good stuff in them for you and you aren't getting all that syrup that's just sugar. Super easy too especially if you have leftover baked sweet potatoes.

Walmart, Dollar Tree, Big Lots, Ollie's, and certain other stores have Dollar spices. I never pay more than $1 for basic spices (and very rarely for any other spices). I find celery seed some places for $1, so if you don't wanna spend the money for celery because it lacks nutrients you can use celery seed for the flavor ❤️. Spices are where you get your flavor, and you don't have to pay a lot for it.

Cheap cinamon is not aa good as rhe better brands. The quality is worth the money.

Budget-friendly tip: Costco shopping day is always rotisserie chicken dinner day. Less than $5. Then I pull all the leftover meat off the bones for chicken noodle soup or chicken salad, then put the bones in the Instant Pot for homemade chicken broth.

I stopped buying the cream of chicken type soups because they are expensive, heavy and overpowering in a dish, and full of additives. I learned how to make a healthier version from a LaLeche cookbook in 1983. In a sauce pan, melt one tablespoon of butter or margarine. Add one tablespoon of flour. Blend until smooth. Cook for one minute to get the flour taste out of it. Add one cup of milk and simmer. This gives you a white sauce. You can vary it by adding shredded cheese for Mac and cheese, chopped up mushrooms for cream of mushroom soup, chicken, beef, or vegetable bouillon, or finely chopped celery. You can double or triple the recipe as much as you need.

That's called a White Rue. You add cheese= Alfredo Sauce and Queso Blanco Sauce(very much dependent upon what kind of cheese is melted in). It's also a start to a good White Gravy too.

While I didn’t grow up in the Great Depression or WWII eras when food had to be stretched as far as possible - this kind of ideology that you can still feed your family without breaking a strict budget is so important to me and I know my grandparents had to live like that with very little and make the most of it. Consider buying miso (refrigerated section of Asian grocery or found in fancier supermarkets) instead of bouillon. Miso adds a salty complex flavor like bouillon, but without the chemicals and with healthful nutrients. The package is bigger and more expensive, but you get far more servings so price is probably similar

I second this! Miso is a much better and natural ingredient. I also would recommend some dashi stock powder(if you like' umami, fish flavor) you can get them in little pouches for a few cents or $1. You can also use miso to make dressings, marinades and even throw it in some butter and a”brown” it over med-low heat until nice and toasty brown for many things, Google it! I’ve been a chef in fine dining restaurants my whole adult life so you can trust me.😉

I appreciate the reduced-price meal ideas. I will say though, my hungry 4-person family would gobble up all that food quickly and ask for more. Teenagers eat a lot LOL I love the idea of sweet potato Mac n cheese, definitely a great twist on butternut squash Mac n cheese. Thank you for sharing!

My favorite cheap meal is salsa chicken with rice. Slow or pressure cook chicken covered in salsa, serve over plain rice. Delicious, cheap, and healthy!

Of all the budget videos I've seen out there this is definitely my favourite. The meals are cheap and you stay true by not adding lots of ingredients that you 'already had in the cupboard'. But most importantly, they look delicious and very filling. Well done, I will be trying these recipes!

I literally paused the video in the middle and stopped to make the stuffing bake. I used cream of mushroom and savory herb stuffing instead. I poured a cup of vegetable broth over everything, and I cut up half a stick of butter and placed the pieces over the top. It turned out great! I'm eating one now and have separated the rest to have through the week. 10 out of 10 would recommend!!

Y’all she said she was staying true to her budget and what she bought. That’s why she only used the salt and pepper from her cabinet. It’s a staple that most homes have. She also said she’s from New Mexico which is a state in the US. Grocery cost vastly varies state by state you might have to do a conversion rate from USD to your local currency or even state grocery rate. I’m confused as to why there’s so much confusion and frustration, she was very up front about costs and location and seasonings. Also if you’re on a $20 budget you aren’t going to get high end chicken it costs so little because it’s not high end. It’s edible and it works in a pinch.

Using water in place of milk makes the cooked eggs fluffy which is perfect for your casserole. If you use milk it gives the eggs a creamy texture.

Get your chicken bouillon in the Hispanic aisle. They have the cubes but also have a huge tub of loose bouillon powder for like 5 bucks. I love not having to crush the cubes or waiting for them to dissolve

If you don’t have an immersion blender you could also just take out about 3/4 of a cup of beans, mash them up, and add them back in. The starch from the smashed beans will thicken up the soup as well.

At first, I was like “where are the 60 meals?” Then, I started thinking about it and this is really enough food for my household to have almost 3 weeks of food. I’ve been lucky that we were able to figure out how to put food on the table all through the pandemic but I definitely could’ve used these more frugal ideas

Curious to know, why not a whole chicken? You can bone and skin it for probably what you gave for the breast and then the rest could be boiled for the chicken broth and meat. That would have saved on purchasing the broth.. I am amazed though at how well you did and the recipes are great. Very impressive!! Thanks for the video. Also, I subscribed..

To keep broth on hand we make roast chicken once a week. Then take the bones and vegetables add water , flavorings,stick in the instant pot for 2 hours high pressure on soup mode . I fill ( 7) 16 oz jars once done .

I have a large family and I cook every night. there a few meals I can make for $22-$25 dollars. But not many because we mostly eat seafood. I have shopped on an extremely tight budget and bought the meals I’ve listed below. 1.) spaghetti 2) Sloppy Joes & fries 3.) fried or grilled chicken salad. 4)chicken Alfredo, 4) beef mac n cheese or chicken mac n cheese with rolls 5) shepherds pie, 6) chicken pot pie 7)chili hamburgers and hot dogs 8) broccoli & chicken 9.) beef stir fry 10.) homemade pizza. 11) grilled chicken, bake potatoes and a green vegetable.

It’s so sad when my husband and I got married in 1965 we spent $20 for a whole week’s worth of groceries. So if you can even get some food for $20 you are doing really good. Our rent was $130 for a 3 story brand new townhouse, we had a basement garage on the ground floor where I could have a washer and dryer and a place for protection from tornadoes and when I was pregnant and had my last appointment and he was coming home to take me to the doctor and he saw a tornado right where our apartment was. He thought I was going to be dead. The main level was a kitchen, dining room and living room, then a second flight of stairs up to the second level with two bedrooms and a bathroom. Luckily the tornado pulled up before it got to where I was waiting in the basement for him. Then after about a year we were able to borrow $650 from his parents and that was a down payment for our first house which we painted to put work equity into it and our 1,000 square foot 3 bedroom, 1 1/2 baths, living room, country kitchen, single car garage new house with a nice yard and a full basement and it only cost $18,600.

I was curious, so I priced out similar items at my WalMart today, and the total was $38.11. The chicken breasts I priced were 3lb. frozen for $9.74. Chicken thighs would have brought the total down to about $34 & that was with a sale on 2.75lb. fresh. So for me, this is still a great budget grocery haul even at 2024 prices!

I agree, prices have gone up since the video was made. I find something at higher prices every time I visit the store. The basic ideas, creativity, and techniques used are still solid and helpful. People who are commenting about GMOs. Everything is GMO. The corn you eat , watermelon , beans , etc. we had to modify them so we can eat them. So before your say all that stuff is GMO and is bad for you , it’s not it’s modified so we can eat it.

I watched this expecting 60 different meals but was actually 60 portions. Not bad all the same. I used to be on an extreme budget and I'd get a full week's neaks fir 2 adults for £20 -£25. Helps if you're savy and can cook, and that was catering to my partner who loves his meat. Also helps to have a well sticked spice cupboard for adding flavour

I don't shop at Wal-Mart (our local one never has decent meat or veggies) but I do shop at WinCo, which is an employee-owned store in the Pacific Northwest that has great prices and always has good meat. I also shop at my local Safeway because, with a little planning, I can still save money there. I also buy some items at Bi-Mart, another local employee-owned store in the Pacific Northwest; they have large bags of dry cat food, which is a good deal since I feed a group of 5 to 7 feral cats every day. My elderly indoor cat has to eat special food from the vet since she's diabetic (I've told her, "It's a good thing I love you!" when I've just spent $29 for 4.4 pounds of her special food. She just sits there with a kitty grin and purrs. She's 17 and we adopted her and her late sister as kittens, so she knows we're pushovers.)

I also use a rice cooker since I can never get rice to cook into anything besides mush otherwise. I've never tried to cook brown rice in it, but I worked out a way to cook Rice-A-Roni in the rice cooker (use about half of the water the box calls for, but use more if you like softer rice; we prefer ours firm.) I paid $15 for the small cooker we use about 8 years ago, and it's more than paid for itself.

I find a whole chicken from Aldi's at 95 cents a pound is a great but. You can make a lot of meals from it...grind the breast meat with onion,garlic, add spices and bread crumbs and egg, and you have patties. Use wings and thigh to bake with parmesan crums, use the bones to make chicken stock, etc.......

Chorizo Breakfast Casserole us delicious. I added 6 sliced leftover cherry tomatoes from last week’s groceries to the casserole. SIDE NOTE: Did you know slicing and cooking a tomato releases even more of the cancer fighting oxidants inside?

I’m a pretty picky eater, so I don’t know how many of these I will eat myself, but these are some great budget friendly meals. Thank you for making videos like this! Edit: also I agree with some of the other comments, if you have any ethnic markets near you, you can get a great deal on spices!

Just came back to say my husband and I both loved the stuffing bake! I will say we had to cook ours for a little over an hour to ensure the chicken was cooked through, but I think this is probably just due to a difference in ovens
