Ingredients:
warm milk - 600 ml (20.3 fl oz)
yeast - 12 g (0.42 oz)
sugar - 40 g (1.4 oz)
TO HYDRATE 15 minutes
salt - 10 g (0.35 oz)
flour - 1.2 kg (2¾ lb)
TO REST 30 minutes
eggs - 1 piece
salt - 8 g (0.29 oz)
cinnamon - 15 g (½ oz)
sugar - 50 g (1.76 oz)
orange - 1 piece
pastry cream - 200 g (7 oz)
sugar - 20 g (0.7 oz)
sugar - 30 g (1 oz)
powdered sugar - 20 g (0.7 oz)
IN THE OVEN 180 °C (356 °F)/30 minutes ( for each dough)
