crockpot chicken with turmeric rice and mixed veggies
broccoli soup with potato and cheese
2 baked crispy chicken with scalloped potatoes and green beans
chicken pot pie with biscuits and veggies
chicken with mashed potatoes, corn, biscuits and gravy
biscuits with gravy, fried potatoes and fried chicken
hasselback potatoes
BAKED CHICKEN

* I loosely followed this recipe but used onion powder, garlic salt and pepper under skin of chicken and then sprinkled Spanish paprika on the outside of the skin.
HOMEMADE ONION SOUP MIX ( can use to season crockpot chicken)
2 tbs minced garlic
1 tbs boullion (I used chicken but beef is usually used )
1/8 tsp onion powder, black pepper, paprika
1 tsp or more dried parsley
add chicken to crockpot with 1-2 cups water. Add spice mix. When almost done add in the slurry mix.
add 2 tbs flour mixed in with water to slightly thicken the sauce in the crockpot

* I modified by doubling the recipe and subbing water for buttermilk and extra virgin olive oil for butter but any oil will work
4 cups flour
5 tsp baking powder
1 tsp baking soda
2 tbs sugar
1/8 tsp salt
¾ cup olive oil (to 1 cup butter)
¾ cup water
SCALLOPED POTATOES
thin slice potatoes and layer in pan with garlic salt, onion powder, and pepper. Make a roux with flour water oil and small amount of vegetable boullion. Add layer of the sauce. Bake covered at 400 for 50 minutes. I uncovered at about 35 minutes to brown the top and then put them under the broiler to finish browning to desired level.
Cook about 50 minutes
*use same method but add gruyere or sharp cheddar to make potatoes au gratin
CHICKEN POT PIE
I made a roux with flour and water and small amount of chicken bouillon and then added in shredded chicken cooked diced potatoes and veggies, then topped with biscuits.
I baked at 400 for about 18 minutes - I brushed the biscuits with oil.

Love the video and the ideas. I'm only one person so I don't really need to extreme budget, but I love to see how cheap I can eat anyway. You have better luck with the biscuits if you add some acid , replace 1 tbsp of water with white vinegar because both baking soda and powder react with the acid in buttermilk even the small amount in milk. Never twist when cutting biscuits, it seals the edges and can hinder rising. If you place the biscuits touching they will use each other to rise higher.

Buttermilk wasn’t used in the recipe so would vinegar still be of benefit?

​@@treasureyourtime The vinegar would make up for the acid that is in the buttermilk, but not in the water. If you use buttermilk you don't need vinegar.

The nice thing about the leg quarters is you can save the bones and trimmings to make a homemade broth too! Another nice thing about many of the recipes you shared with us this week, is that they can easily and affordably be adapted and changed. You can use different seasoning and ingredients to account for preferences/dietary restrictions or to use up whatever you have on hand.

Yes 👍 You are so right. I wish I wouldn't have forgot to mention the broth. That is such an important point for new cooks. Thanks for mentioning this. I love the idea of families adapting these recipes for their own tastes. Also I was kind of bummed that I didn't highlight the use of the shredded cheese in my recipes more. I could have topped those potatoes with it. I thought I would use it more at the end, but I just ran out of time.

Terrific recipes! You also might want to use some of the trimmed fat to render out for use in making your roux (it'll add flavor to the oil that you're using).

Thank you for the wonderful ideas. I was lucky enough to purchase 2 of the 10 pound bags of leg quarters from Aldi this week discounted to $1.49 each. I never catch the markdowns and was elated, and this gives me more ideas of how to use them for my family of four (adults). This weeks ideas were especially helpful for us, as my son has egg allergies and none were included in this haul. I love watching your videos, thank you for sharing with us.

Mayonnaise makes a great sub for fat/buttermilk in biscuits. I love the big bags of chicken legs! I use one (frozen) leg in the instant pot with 3 cups water, poultry season, onion and garlic powders, and chicken bouillon. 25 minutes, natural release. Great soup plus shred half the chicken for other recipes. Customizable with rice, potatoes, veggies, etc., added after 1st natural release. Cook another 10 minutes or so with another natural release.

We use a simple drop biscuit recipe ALL of the time. I can’t find the original recipe online (my husband found it like ten years ago when we were newly wed college kids), but I love it because it’s no fuss and dirt cheap. It’s 2 C. Flour, 3 tsp. Baking powder, 2 Tbsp. Sugar, 1 tsp. Salt, 1/3 C. Oil, and 2/3 C. Milk. Stir together until combined, plop onto a baking sheet and bake at 450 Fahrenheit for 12-15 minutes (my I oven usually cooks them in 13). I’ve found they’re fluffier when you don’t overwork them, and work just fine for biscuits and gravy, without the extra mess and steps to roll and cut them out.

@@pennynickels5216 I haven't tried freezing before baking, but we've frozen them after and they seemed just fine, as far as I can remember. I haven't tried it in a few years, since my family is big enough now where my kids eat most of them right away.

If someone is short on cooking oil or fat, save the fat you trim off the chicken and any skin you remove. You can render the fat out of that in a frying pan. Chicken skin chicharron is delicious.

Michelle, I love how creative you get with making meals. We do a lot of shelf cooking towards the end of the month to empty out the freezer and the pantry. We always feel those are the best dishes when we just throw things together and use spices. Thank you for what you do 😊

You did a great job. You’d have enough from your crockpot chicken to make a chicken and rice soup for another dinner or lunch. Also with a little more rice a chicken fried rice for another lunch. Lots of possibilities with the extra chicken - chicken biscuit sandwiches? So many meals! People can feed their families but they actually need to cook and not use convenience foods. Snacks and drinks consume a lot of grocery budgets. Eat popcorn(popped yourself)for snacks and iced tea or water for drinks. That would save a lot of money for many families. A 12 pack of coke now cost around $7 - that same $7 can buy chicken to feed a family for a week. 100 teabags (house brand) is maybe $3 and would last a family two or three weeks for pitchers of iced tea for the whole family.

And bake your own treats! Oats are cheap and are nutrient dense. Bars, biscotti, cookies, crust, granola, oat scones, topping.

I agree - beverages and snacks eat up a lot of budgets. Better to drink water between meals and we used to have peanut butter on saltines or toast for after school snacks.

I also find if you ask the butcher at your grocery store when they put out the reduced meat each day you can get excellent deals usually half the price. I take it home and freeze it immediately. Thanks you gave me some excellent ideas.

So this might feed one for a month! Excellent. After you pat out the biscuit dough, fold it over onto itself a few times. This will give them more layers. Also, if they touch each other while baking, they rise higher. 😋💛😊 I love chicken potpie

I look forward to your videos every week! As someone who lives a continent away, it always amazes me how much food you can buy for $20! I feed a family of 7 every day and your creativity inspires me every time. I have a child with several food allergies and I've learnt to adapt so many recipes. Now I need to figure out how to make affordable gluten free biscuits, it's not something we eat here

I have a lot of viewers with health conditions and food intolerances so I usually try to have some variety but adapting recipes is definitely key. yeah and I noticed they have good deals on the Great Value brand frozen chicken too. Not quite as good, but still good. I wish I would have mentioned that. It was super busy at Walmart the day that I was filming. 😞

Yum! Great budget video. 😊 A thought for those who do not have a fat/oil in their pantry: boil down the skin and fat parts that were removed from the chicken, allow it to cool and skim the fat from the top. The water portion may also have a chicken flavor and can be set aside and used. When baking/broiling chicken in the oven, the sheet pan drippings can also be used as a fat/oil. Thanks for the great video!

Chicken fat is called schmaltz it is loved in Yiddish cooking. I used to save it all the time but somehow lost the habit.

Good job! From scratch takes extra time but it’s better for you and the flavor is off the charts! My family wants to go out to eat all the time but they’re always disappointed. Restaurants cannot compete with from-scratch cooking.

I don't know if you have an Aldi's near you, but the one 30 minutes from my house has that bag for even cheaper. The last time I checked it was about $5. Also, I like evaporated milk for milk/cream substitute because its shelf stable and it has a really nice flavor in cooked dishes.

I use the quarters all the time. I roast 2 or 3, and the rest goes in the crock pot. Separate and shred the meat for casseroles, and the broth makes a large pot of soup with a bag of mixed vegetables and either noodles or dumplings.

You saved my mental wellness tonite. I was despairing over my food budget ( 2 weeks from a money drop), and you made gravey look doable and uncomplicated- I have always used canned gravey or the juice from a roast. So I made it with a glutenfree flour blend sub, and now I feel hopeful about my future. And I added gravy making to my resume! 😂 I promised myself I would tell you that my despair lifted while I was crafting a roux for my first time! Thanks.

This makes me so happy 😁🌼🌺 Being able to make a roux is a total game changer in the kitchen because you can use it in so many different ways. If you only have rice in the pantry but you have bouillon and a little oil you can make a delicious and filling rice with gravy for dinner. I love that you were able to customize it with your gluten-free flour. As many others are pointing out, I could have also saved the drippings from the baked chicken to use in the roux. Thanks for letting me know this was helpful 🥰

You can also wash your chicken with lime water or a little vinegar mixed in water, let it soak in a bowl for about 5-10minutes then rinse. Also you can scrape & remove the little yellow 'skin' on the tip of the drumstick.

Yayyyy!!! I’m so glad you liked the idea! It was a lifesaver some weeks when my girls were little. It’s also great when you need to feed a ton of people and have a small budget. Two of our favorite ways to do it were 1) remove the skin and brown it with s & p, garlic, onion powder and paprika. Brown them in an oven proof skillet then add a teriyaki sauce, make some garlic butter rice and something green of your choice. Crazy cheap and easy but people go Gaga over it. 2) barbecue chicken and potato salad. Super cheap and easy but a big crowd pleaser.

Your chicken meals look fabulous! Incredible that you got all of that chicken and veggies for only 20 dollars. Chicken and potatoes are so easy to prepare and always a big hit with my family. I've never tried to make biscuits or scalloped potatoes - now I will. :)

We have vegetarians and meat eaters. I brown up ground beef, cook pork shoulders in crockpot, cook chicken in crock pot and then portion and freeze. My meals are tacos (lentils for vegetarians, beef for non), chicken a la king over rice (use white sauce with margarine, flour, and plant milk for veg. For meat eater add some instant chicken bullion powder and the chicken from freezer first dethawed in microwave. That chicken is a great find, at less than one dollar per pound. When I found out about it, I bought it and prepped it all the same day. I cooked it in batches in my instant pot. I fully cooked some and partially cooked the rest. I am only feeding myself, so I froze single portions. I labeled with the date and fully or partially cooked. It's so easy to pull out a portion to fix any chicken dish that I'm in the mood for. The bonus of making in the instant pot, I ended up with more than a quart of broth.

Great video. I liked all the ideas. I personally would have collected all the bones to make a bone broth in the slow cooker. That way you can control the salt level and freeze it in different portion sizes for future use such as gravies or soups or stir fries.

You did it again! A practical and creative tutorial. Your biscuits looked great and your meals looked appealing.In my area, biscuits made with oil are called pilot bread. I make vegan buttermilk by putting 1 qt of water 1/4 cup of oats, a pinch of salt and 2 Tablespoons of apple cider vinegar into a blender. I blend it until there isn't a trace of oats.Some recipes call for half a cup of oats which makes an even thicker product. I am with you....I bought a torch and cannot get the golden brown I want . I always get black char!

Just saw a video from Julie Pacheco and she priced the bag of mixed veggies frozen against the can of mixed veggies…the can was cheaper!! And the fresh broccoli was cheaper than the frozen. You remind me of her, you are clear and explain everything and very nice to listen to with a nice voice. And you’re so sweet to call us family!!! Hello 😁 Julie Pacheco is great! The can has water added though, and the frozen doesn't. I guess one would have to weigh out the actual product to be sure. I'm guessing they are probably equal. I'm partial to the frozen though, because it doesn't have all of the added salt that canned products do. But fresh is always my favorite. It's crazy how fresh can be cheaper than frozen. You can use oil, bacon grease, or butter to make biscuits. Any fat will do. Use what you have. You can also make a buttermilk substitute for the biscuits by adding 1 tablespoon of vinegar to 1 cup of milk. Let rest for 5 minutes. Add to your recipe like normal.

Hi & thank you for this great video. Your recipe ideas are very good & your manner of presentation very easy to watch / listen to. I am very impressed with the baked chicken, will definitely try it soon. I was interested to see that you baked the pieces on top of a wire rack on a baking sheet, think I'll do that too. Like you I think paprika is great for cooking, gives a wonderful taste & colour. I also like the way you used dried parsley to improve the appearance of a dish. My mother was an excellent cook (& she was on a very tight budget). She always believed it made everything taste better when it looked attractive on the plate. Well done ! You did a fair job on the pricing. A bag of flour is crucial for budget meals, or any meal really. People just have to be willing to cook and do the work , as you did. A great tip (that I do when we get a Costco rotisserie chicken) is to use the bones, skin, any fat and left over meat to make stock in my crock pot. I put those things in, with water, seasonings and any veggies I have and let it cook on low over night. This makes a beautiful chicken stock. 🥰🌱🌿🌷💐☔💗✝
