Hey everyone, it's Chef Jazmin! Today, I'm bringing you a classic breakfast favorite with a twist - my delicious Sunday Scrambled Eggs! But these aren't just any scrambled eggs, oh no. We're taking things up a notch by using pastured eggs and cooking them up in ghee for the ultimate flavor and nutrition boost.
Now, you might be wondering why I'm using ghee instead of olive oil. Well, let me tell you. While olive oil is great for drizzling over salads or adding a burst of flavor at the end of cooking, it's not the best choice for high-heat cooking methods like scrambling eggs. When heated to high temperatures, olive oil can actually break down and lose some of its beneficial properties, not to mention it can develop a bitter taste.
That's where ghee comes in. Made from clarified butter, ghee has a high smoke point, which means it can withstand higher temperatures without burning or becoming rancid. Plus, it adds a rich, buttery flavor to our scrambled eggs that olive oil just can't match.
