Makotoya has been making Yakisoba Noodles since 1946 in the beautiful city of Kawagoe, just 30 minutes away from central Tokyo. Not many tourists know about this place, but the locals know this is where to go for the BEST Yakisoba.

This was just the right video to come home to. Simple food done well is the best. That egg was borderline x-rated. Loved this. I am so hungry now. I don't suppose they deliver to the UK 🤔🤤

oh my god.. that looks so phenomenally tasty! you know, since I started to watch your vlog, I have begun to return to my roots- I am half Japanese. Japanese food is comfort food for me now. I would love to see more yakisoba variations!

We went for a day trip to Kawagoe from Higashikurume in 2018 and had a wonderful time! Such a nice place and interesting history. But by the time we were ready for dinner, almost every place had closed. Thankfully we found an amazing Yakitori place. Can't wait to go back and find that yakisoba! Thanks for making the video! Looking forward to seeing you try other things there!

Yakisoba , oh how I wish we had smell a vision I could smell the goodness from New Zealand . I love spaghetti sandwiches so Yakisoba rolls yes please and with the egg as Satoshi had count me in so refreshing. 😋 Thanks so much Shinichi and to this restaurant for filming I must give this a go at home.💚👍

I've only had frozen yakisoba from costco but it's good..... I can't fathom how good it would be from an 80 year family run business

Yakisoba looks so good. I don't think there is even a decent place here for Yakisoba. I can't believe the egg is so orange. Can't wait to go back to Japan. Thanks for the video!

Yakisoba pan reminds me of our British "Chip Buttie" which is fries (chips in Britain) served between two slices of white bread and with any sauce you like! All carbs on carbs too!

The secret to getting dark orange yolks like that is to feed the chickens dark greens like kale and mustard greens. Basically treat them like chocobos with their diet and you'll get some lutein-intense eggs.

Lovely video, thanks for sharing! Great traditional noodle shop, and good background chatter while eating, "thank you for watching the video" I don't speak japanese but i'd imagine you are teaching. Would love to see some night market videos around the cities, trying different food. It's awesome to see! Other toppings on the noodles would be cool too :)

I grew up on spaghetti and Lo mein sandwiches, normally made with left overs. And still eat them as an adult. Quick and easy to eat. Great for on the go. I would love to try one of their sammies.

American diners have come to believe that egg yolks should be a sad and sickly yellow. Farm chickens who scrounge for commercial feed, yes, but also hoppers, crickets and grubs, lay eggs with startlingly vivid yokes from deep orange to brilliant red. And you can taste the quality.

It's feeding dark greens to chickens and even marigolds to hens to get that dark orange color. Feeding them beet greens and purple cabbage will turn yolks to a reddish orange. Your average American don't like change, they are used to pale yellow yolks. These deep orange color yolks are scary to them, especially children. The only ones who appreciate them is country folks and people who understand food. I raise poultry that lay these beautiful yolks and that is who my clientele are. If American diners were to serve these eggs, especially in the cities. Nobody would eat them. So don't blame the diner. Business is business.

Disambiguation: A diner, a person who dines or eats. Since I was referring to diners as people I didn't expect anyone to mistake the intended meaning of the word. Sorry for the confusion. My father's family used to raise eggs on their farm and it was he who explained to me the variety of yolk color. And chickens are omnivores, btw. They do not simply eat grains and greens. True free range chickens left to their own devices eat insects, frogs, lizards, mice... anything they can tear their beaks into.

@@robertbess9636 Yes chickens are omnivores but if left to free range and just eat local grasses and bugs. Their eggs will be a tad darker yellow. It's only when you give them a diet of dark greens, which they don't have access to naturally, will they get the dark orange color yolks. Bugs have nothing to do with yolk color.

@@y-mefarm4249 - Xanthophylls is certainly the primary determiner, but ANY food that contains a natural pigment will influence egg yolk color. That includes the sort of insects and reptiles farm fowl are likely to consume. We know more about the impact of commercial feeds on poultry because that's what researchers are more likely to study.

@@robertbess9636 I see no difference in yolk color on just free range birds. They are darker them factory farms but nothing spectacular. And that's eating insects, small snakes and frogs plus even mice. It's only when I add dark greens does the yolks change to that very dark orange my customers want. I farm for a living. And is something I have been messing with for about a decade. In July and August I will be able to provide the dark orange ish/red yolks. And it has zero to do with bugs. 😉

"Yakisoba" translates to mean fried noodles. Usually "Soba" refers to Buckwheat, but the noodles typically used in this dish are Chinese-style wheat noodles.

Yakisoba is made with wheat noodles, however this shop uses special thick and chewy noodles which are fantastic!

The yakisoba pan looks pretty, but I would think it might be too bready tasting, what with the bread and the noodles. Granted, different textures and flavors..... but I would think rather bland too. The yakisoba with egg looks good-- really fresh, crisp cabbage. I like how the chef layered on the sauce to allow it to really absorb into the noodles and develop a slight glaze on them at the end. I know you elected to share the basic version this time. I am interested in seeing what other seafood, meat, vegetable, and seasoning toppings are available. Thanks for sharing.

Like those thick noodles! Looks like yakiudon. I usually put onions and carrots in mine along with cabbage. And sometimes mushrooms. Is plain cabbage more typical?

No, I'd pass on the carb-crazy roll. But I love Yakisoba, even tho I don't have a place nearby to get it. I know you like to try packaged foods :) and there's a frozen box of six yakisoba noodle dishes which I buy when I can. They put asparagus tips and a bit of broccoli to boot. My favorite part is that they are not drenched in a sauce. Whatever it is, you've made me hungry and tomorrow I think I'll try making something similar to yours. Thanks as always for your great vids!
