Good one. I request you to clarify if it is possible to maintain a constant eye contact with some one. I guess it is not possible to maintain a constant eye contact with oneself when they practice looking at the mirror or facing the camera just alone without the need to turn towards the board. It maybe due to a variety of reasons, not necessarily disinterest or not confident. Maybe the person thinks for an answer when questioned either closing the eyes or looking somewhere and resumes eye contact, hesitation, and so on. And one cannot keep the eyes open all through the conversation because it is human nature that each and every one's eyes blinks at a certain interval that varies from one person to another to keep it lubricated and during this time people usually tend to avoid eye contact. Coming to Fidgeting, I agree that people do it out of nervousness, but not all. Some does it purposefully to draw attention, to check if the opposite party could be taken under their terms if that person follows their hands and usual human tendency is to get distracted (not attracted) to whatever moves around them and it is by nature as well as essential because if not one may end up in a road accident if that person could not sense the movement of vehicles from either sides or from behind. Sorry for this lengthy comment. Actually wanted to discuss on few more points too, but I don't want to bore you with still more lengthier comment.
