I don’t know if you already covered the cyclops. It seems that elephant or mammoth skulls were seen as the skull of a giant humanoid. This because the hole were the trunk used to be looks like a giant eye socket. On the Greek Islands the cyclops are tought to have been attributed to the skulls of an early spieces of small triceratops.

Instead of the animals mentioned for the unicorn it could be that people found the fossils of a prehistoric creature called C. antiquitatis or aswe know a wooly rhinoceros and not a horse and it would make sense because the fossil remains look like this and if the second horn (furthest from the skull) was broken off then it would look similar to a horse skeleton.
