Good recipe... But can you clear my doubt.... All these years listening and now watching videos it's suggested that either Luke warm water/milk is added to the yeast to fasten the proofing process... But here is see you adding ice cold water to it... What's the logic behind it?'

Because the temperature is too high in the summer, I add ice water to slow down the yeast fermentation, and warm water will be used in the winter
