This time, we will introduce the behind-the-scenes of a fish shop in Tokyo's Aomono-Yokocho, which has a very abundant selection of products. A lively fish market where even professional chefs come to purchase ingredients. This fishmonger procures fresh fish from Toyosu every day, and you can also encounter fish that you cannot usually see at supermarkets. Since I have commented on various fish, please turn on the subtitles and enjoy until the end.

it's amazing seeing people work this hard at something so labor-intensive. Just every single day. It's the kind of thing that built the world we're in where some of us can, or have to, live a way less laborious lifestyle..

Amazing to see their knife skills. I know they don’t waste anything. Knowing some of the stuff are put in bags & sold too for soups/broth. It’s wonderful.

these people work so hard! I hope he is able to open his restaurant, i love seafood but it is very expensive. The kind of place where you can go and casually eat seafood without worrying so much about price sounds wonderful. im sure hed know exactly what to pick for his menu to keep prices low!

Thank you for going through the effort of making this dogumentary! I love seeing “a day in the life” videos. The owner and all of the employees are incredibly skilled! I’d be so excited to get fresh seafood from them ❤️ I think sourcing the materials is one of the most fun parts of cooking because you get to meet so many wonderful people :)

父が海釣りが好きだったので小型のアジをよくたくさん釣ってきました。下処理をして冷凍したり酢漬けにしたり、ご近所に配ったりしていました。もう亡くなって釣りたてのアジを食べる機会はないのですが、アジをおろすところをとても懐かしくみました。大きな魚も技術だけでなく力がいるでしょうね。素晴らしい映像作品でした👍どうもありがとうございます😊

かじきまぐろloveです💖貝類は子供の頃は平気で食べていたのに いつの間にか一切食べられなくなりました 残念😔でも美味しそう🤤 平目の捌きが美しいですねー 鯖も美味しそう、、、煮ても焼いても揚げても美味しい鯖 子供の頃良く母親が 焼いた鯖の身をほぐして混ぜご飯を作ってくれました このお店のお隣に住めたら毎日が幸せです 飲食店をオープンされたら是非伺いたいですね☺

It’s very interesting to see how people work in the kitchen of a small fish shop. Thank you so much for sharing. I am also curious what the fish shop will use those fish bones and skins for. Hope those parts won’t be just discarded as trash. That will be quite a waste!

一部の骨や皮は「あら」という名でスープ用に、また大きな魚のエラやヒレなどの部分は「カマ」と言って塩焼きなどにします。 内臓はほとんど食べられないと思います。

If I can make a suggestion for a future dogumentary; I'd love to see a day in the life of a Japanese baker and patissier. I plan on opening my own shop in Japan sometime in the future and would love to see how those things work here and how it's different from my own home country.

壁は汚れているけどまな板は綺麗ですよ。ずっと水道水で洗い流されています。日本の水道水はとても綺麗で美味しい水です。
