Working behind the scenes to keep the operation running smoothly, the dishwasher is arguably one of the most important people at a restaurant. At Gage & Tollner, one of the oldest restaurants in Brooklyn, the job falls to Drevon Alston. A former subway performer, Drevon, who goes by Dre, puts in long hours not only washing dishes but also shuttling them across multiple floors to different parts of the kitchen.
“On the Job With Priya Krishna” is a series about labor and the people who shape what we eat and how we eat, and whose jobs often go unseen. On this episode, Priya follows Dre as he hustles through his workday.

Because it's a job. No point in acting friendly with the dishwashers when they are the most expendable and has the highest turnover rate. Seeing how he just started at the job tells me there were 10 other dishwashers before him. If he's there long enough and the workers sees hes serious then im sure he will eventually get to join in on the meals and whatever perks the other workers get.

Yeah and no wonder there were 10 other people before him, they never fucking got fed. Why does everyone else get to eat except them? Why do they have to work like dogs while everyone gets a home cooked meal in the middle of the day except them?

I know he seems okay with it and I understand the logistics of it, but man, it's not fair he has to spend his hard earned money on a meal across the street after cleaning up after his colleagues' family meal! He's a talented dude. Dre and Keith deserve a literal seat at the table!

Dishwasher never goes hungry in my kitchen. Even if they can’t do family meal, one of the cooks can easily get something on the fire. That falls apart, everything else goes to hell.

@@I3EJEL They are respected by the servers and cooks, and prep and managers. It's just that at a busy resteraunt, even when it's well run...you really don't have "rights". Even at my place, where I have seniority, it's hard to get out if my replacement does not show up. - If this place is like anywhere else, the cooks will hook him up. - But you are def right, Society has changed alot and I agree with you. It's just different when you work at a busy or popular place like this.

Though it stressed me out to see Dre and Keith not getting to have family dinner, I have nothing but admiration for their work ethic and positive attitude. Dre does an important job at the restaurant with grace and joy. A beautiful thing to see and I hope he gets to realize all of his dreams!

My dad washed dishes for 25 years. When I was in jr high he worked at two restaurants. Came home from one, ate dinner, and went to the next. He enjoyed his job and did it well. I was embarrassed to tell my friends that my dad was a dishwasher until I got a chance to work with him my sophomore year in high school. I realized how wrong I was and became very proud of him and his dedication. Dishwashers are essential and deserve mad respect. RIP dad, thanks for working hard to provide for us! ❤

The fact that these guys spends and extra hour and half to make sure that everyone else is able to eat and enjoy a meal he hasn’t seen partaken in is insane. They are so thankless and I hope they are given a chance to peruse their dreams. They are so cooperative and supportive. I love to see it

sadly that is how it is - I was a line cook and the owner didn't want to provide any family dinner and didn't want us taking a meal break before dinner service begins to. Talk about against labor laws at that place. Geesh!

As unfair as it is that Dre & others were unable to participate in “family dinner”, I got so much more out of this video. That young man is golden. He spoke highly of his workplace, duties & team members. He kept a smile on his face & never bashed the demands of the employer. I hope this video opens doors for him that provides him an opportunity to do what his heart desires. We’re complaining on his behalf but he kept his integrity in tact & mastered the ability to be thankful instead of highlighting the down side of things. He will be blessed even more. This is not his end all be all. Thank you for introducing us to this wonderful person.

As a former head chef too and quit the industry, I could tell by the energy CDC is a fcking plastic and a lapdog for the restaurant owners. No way during my tenure as a HC would I allow my Dish Crew to go on spending meals outside, I always tell one of my cooks to leave something for them. For me it is MANDATORY to feed them, they can get even takeout meals before they go home

I worked in the industry for a few years before going back to school - there was one night where our dishwasher cut his hand open on a broken cup. The entire service came to a screeching halt; nobody could bring out food because of lack of dishes or cutlery (or as we called, "wraps"). It took 3-4 people all at once to try to get things going again & to attempt to clean at his same rate and even then, they achieved 50% efficiency at best. They are unsung heroes, I always appreciated our dishwasher. PS if you are in the industry, always try to clean your dish before handing it to them! Every small bit of cleared food means 1-2 less seconds required to clear it prior to spraying it down. It adds up over the course of the service.

The chef de cuisine actually rolls her eyes when first hearing about the bottom of the hierarchy, aka Dre and Keith. Then she contradicts herself by saying all jobs should be respected but then says there is a hierarchy, which is clear when Dre and Keith aren't saved food from the family meal and are not offered a seat at the table. Is that the respect she was talking about? You know Dre and Keith (and the other dishwashers) are doing the most laborious work to keep this place running, so treat them right!

This young man is absolutely gold. He is an inspiration . And what an attitude!... He carries himself with respect yet he is modest. He is neat and clean and organized. He is articulate and has exceptional communication skills and people skills. He is willing to do humble menial tasks with the bigger goal in sight. He has a dream he is following. He is not a complainer. Instead he compliments others generously. He expresses himself through dance and so obviously loves being around people and feels comfortable receiving attention in public. He doesn't mind hard demanding work standing on his feet all day. This young man is a jewel of a human being! Please someone in the business marketing or business finance industry get this kid into a mentorship program or scholarship program. ASAP!

It's been said but it needs to be repeated! I get (but don't love) that logistics (and hierarchy) may make it difficult for Dre and Keith to actually sit down for family meal BUT the restaurant management should be flat out ashamed of themselves that they don't even provide them with a meal/plate/food to eat when they have the time. I mean, ARE YOU KIDDING ME!? That is just plain despicable. Shout out to the dignified and stellar Dre, Keith and dish pit crew.

Yeah it sounds like the shift ends at 4pm but he is working until 5 to 5:30 pm. I wouldn't be shocked if that was unpaid time. I had something similar happen every-time I was a dishwasher. At least I got to have free food for lunch time. It sounds like the employer commits wage theft.

As someone who did dishwashing job in the past I can totally relate, it’s very fast paced job and often time you don’t even have time to eat lunch. This jobs deserve 25$ / hour !!! RESPECT

I do believe it’s the shittiest and least enjoyable job to have in a restaurant so 24 seems completely justified to me. The whole ship would sink without em

I was a dishwasher at a busy restaurant for one summer many years ago. It was the hardest job I've ever had. The worst part was how I was treated by co-workers, since the dishwasher is the least respected restaurant worker. The salad maker literally ridiculed me and treated me like garbage. Nobody ever said a nice word to me or offered me a meal. It's a nightmare job and the guys who do it deserve total respect.

@@RamKshetry In every restaurant Ive worked, dishies were always treated well by other staff. Managemant however, didnt give a shit and made them do wayyy too much for the pay. When I was dish, my chefs would help me with the shitty stuff like hood vent cleaning and mopping sometimes.

My Father was the head chef at a Continental restaurant. He worked a 12 hr shift, but no matter how late, my Mom waited up for him, with a hot, traditional Asian meal ready for when he walked in the door.

My Father could have eaten at anytime or anything, he wanted. This is my lived experience that I am sharing. All the staff could order from the menu with exception of top priced items, and have it prepared to their liking for a meal per shift and take turns for breaks before peak hrs. If this establishment opts to have designated meals there should never be a reason for staff not to be feed, or have the choice to pack it up for later. This is the one place, especially a high end establishment, that anyone should go hungry. @@stephaniecody8031

I’ve worked as a dishwasher for the last 5 months, I have always tried to maintain a good attitude about my work but recently, I put my two weeks in, and I won’t ever regret working in dish. I my whole life have wanted to work in food, and experience every position before eventually moving up to ownership or management, but after working a couple years in restaurants I can say for sure, no one has it tougher then dish, and I salute Dre for doing it as well as he does, for as long as he has, and with the amazing spirit he has

lol it isnt family dinner, it's family meal. the staff isnt sitting down and eating dinner together. The kitchen prepares a questionably edible meal with whatever produce is JUSTTTT about to go bad. Then you eat the food as fast as they can to get some nutrients before the 7 hour shift with no breaks

Y’all killed it with this doc! Dre had me smiling throughout. His energy was so positive and I truly wish him the best as he figures out his career. He and the rest of the dishwashing crew seem like great people to work with. Seeing all this coordination is giving me a massive respect for how restaurants run. I just hope that this restaurant does a better job of making sure the dishwashers can eat family meal and get out of work on time.

Hardest workers in the kitchen hands down. We have 1 single dishwasher in our restaurant. High end restaurant located in the best city club in the US. His name is Edwin, from Trinidad and is 64 years old. He has been with us for 25 years straight. Dude is an absolute beast, works hard and fast. Keeps all our stainless literally looking brand spanking new. Not a single oz of carbon build up anywhere. We would seriously be lost without him. We thank him everyday, cook him anything he wants to eat everynight and go out of way to make sure he knows how much we love him. Please thank your dishwashers. A restaurant literally cannot operate without them.

The dishwashers are always my favorite people and I have a huge amount of respect for them. As a Server I see my self at an advantage but also dislike the feeling that someone may feel like they’re below me. Regardless of them not having time to grab some food from the family meal I will always fulfill my duties by asking them if I can prep them meal box. Everyone deserves the same treatment no matter the position you’re at. ❤

As a former server myself, I think Dre could easily be a server if he wanted with his charm and good attitude! Don't let management keep you in a position that's harder for them to fill if you want to switch up - although absolutely no shade on dishwashing of course :)

No matter the industry, a hard worker with a great attitude is worth their weight in gold. Dre’s attitude and work ethic is admirable. I hope that management and/or ownership sees this and moves Dre on to another position, so that he can get to where he needs/wants to be. The whole dishwashing crew is top-notch!

As someone who's worked as a dishwasher, this is absolutely absurd but very on brand for how many times - the dishwashers are an afterthought while we're there but when we aren't - the kitchen comes to a standstill. The thought that everyone has a family meal but Dre and Keith don't get a chance to sit down or having to go buy food because there's nothing left is horrible, and it's a problem that can be resolved. This isn't the best look for the business. Shoutout to Priya for highlighting the great work they do, and also showing how/where they get the short end of the stick.

Well, it was once an integral position, but technological advancements are a thing. Give it a decae or two, and the restaurants in NYC will look like the ones in Japan, completely automated, no cooks or dishwashers. AI is extremely advanced

I ran kitchens for 13 years, from Georgia to California, and Dre is a dream kitchen employee. His macro view on how a restaurant is ran, paired with that amazing work ethic and personality, will take him to some amazing places in his life, and I wish him all the best. I’m a barista and manager at a local cafe and I will gladly be the first person to tap out our dishies for when they get their **free** meal break. These guys deserve so much more, loyalty to companies like this is futile and they will never get recognised for their work. Such a shame, they need a better kitchen!

Love this series! I think its so interesting that the chef de cuisine speaks about this idea of a 'family' and yet not all of her staff get fed during the family meal. I know that there are so often time constraints in hospitality and it can be out of their hands but the least you can do is keep them some dinner!!

I have worked in HR/Talent Acquisition for almost 25 years. Drevon is one in a million. His energy, focus, positive attitude, leadership skills, dedication, and commitment to teamwork are invaluable. You can train and teach almost any skill on the job, but you simply cannot teach what he brings to his work. Having hired positions for virtually ever career level in countless professions, from CEO to (yes) dishwasher, I can count on one hand the number of candidates who exhibit such a comprehensive suite of the critical, intangible positive attributes Dre demonstrates in this piece. HR Generalist or primarily Talent Acquisition? If you've done any HR Gen. work, I am curious what your thoughts are here. My primary question after watching this was: (1) If everyone is getting a cash value perk (family meal) and he is not, isn't this an unfair compensation issue? Let's say the annual perk/benefit of lunch is valued at $3825 (5 days a week, 51 weeks a year or however often there is not enough food left over for him) and is provided to all other employees except his department, is this not grounds for a claim? (2) I think there is also basis for a claim regarding unfair/unequal access/exposure to ancillary departments/team building (family meal). Just wondering what you think. My biggest hope is someone seeing this video and recruits him for a guest facing role. The work he is doing is honorable but he seems to be very well suited for work that will use and develop his interpersonal skills.

Thanks for showcasing the lives of these hard workers. I did a bit of dishwashing, granted, not at a high end, big place like this, but there's definitely a zen to it. Get some music going, let your hands (and the sprayer) do the work. Dre is right, it is an easy job but it is also a physical job. There's no complex problem solving, but you keep busy, keep moving, and a shift flies by. I gotta say though, this brother can aim so much higher. He's got a great attitude and hustle. If he doesn't get rewarded at this place, I hope other local restaurateurs & chefs see this video and give him a chance to shine. I was in a similar place in my life at his age, things get better with hard work and a little bit of luck if you seize it.

Wow!!! This video was absolutely incredible and resonated with me so much!! Thank you Greg Gorgone for sharing & highlighting this!! Our dishwashers in our kitchens are truly the backbone of the day to day operation! It is such a thankless job and often times our dishwashers aren't praised or recognized due to the fact that no one "sees them"! They are working tirelessly to make sure the dishes, pots/pans and the entire kitchen is cleaned/sanitized thoroughly throughout the day so that the rest of our kitchen team can operate appropriately! We must encourage & uplift them more!! I started out as a dishwasher when I first got into this industry and I definitely understand how a dishwasher may feel working the day to day operation, so this is why I advocate for them so much! I moved my way up into operations leadership but I NEVER EVER forgot where I came from! Over the years I have developed so many of my dishwashers who have moved up the ranks & have gone on to be successful leaders! Often times as leaders we put so much emphasis into the food, service & financial component of our operations and forget about our dishwashers...they are our PEOPLE!!! We need to equally put recognition, gratitude, appreciation, and development towards our dishwashers! If the dishes & pots/pans weren't cleaned, the cooks wouldn't be able to prepare anything & then the servers wouldn't be able to serve our customers & then we wouldn't make any profit or have any business! Let's continue to highlight and genuinely appreciate our dishwashers in this industry & also continue to develop them to move up in the ranks of the kitchen. Dishwashers are excellent organizers, detail oriented, leaders & multi-taskers!! I know plenty of leaders who have moved up in the ranks of operations...all I am asking is PLEASE don't forget about where you came from & how you developed to where you are! They can’t stop washing the dishes until everything is the clean or the whole kitchen gets behind, they could have a policy in place to let the dishwashers eat first, 20-30 mins then get back to work before the others so there is no backlog. He buys food because he has to, he wants family meal but no one says him or Keith anything. You can tell by his tone that he probably never gets family meal

For 6 months I was interning at a hotel as a receptionist, food runner, bartender, housekeeper, night shift, and probably 45% of the time I did dish washing for a hotel that fits 60 people inside and around 45 outside. It was really tough, because on most days it was only ever me as the server there, except for any special events. I understand this guy so well, how hard he works to clean for the owner’s family, as I had to do the same thing while getting paid below minimum wage and working while all the manager’s friends were having a food party together without me and another chef. It was painful. But it gave me a bigger desire to feel clean and keep clean at home. I think people who work with sanitization and public hygiene and cleaning are one of the most hardworking people of our world🙏🙏🙏

I moved to Europe 2 years ago, and since then I work as a dishwasher and now is the one of the jobs out there I admire the most. It is hard and heavy but satisfying at the same time. Shoutout to Dre for keeping the smile on all the time and shoutout to all dishwashers out there. Beyond that I was a journalist in Brazil so I recognise a good reporter and reportage when I see one!!! Great job 🎉

10 years a Cook here. NYT Cooking Respect & Thanks lot for showing the life of Dishwashers. And to Dre my Man your killin it!! if you keep working with same Focus definitely your gonna be a Cook I can tell you this with confidence because as you even I 10 years back started as a Dishwasher in Restaurant Career currently I’m working as a Sous Chef for very famous restaurant in Italy. I was a dish washer at my city’s fanciest restaurant during Covid while in college. By far the hardest job I will ever work and I’m an engineer now. Nothing but respect for people that work dish. Having a positive attitude while doing it is an incredible asset. I never want to go near a line again because of it.

That pit is the heart of the restaurant. No plates equals no food. Equals no sales!!! If that man and his crew isn’t at the “family dinner” that clearly shows it’s not a family and the battle isn’t together and equal. I’m routing for Dre! Can’t be a super star over night, you have to keep working to prepare for when that opportunity arises. That’s the mind set of greatness and a winner.

@@Whocareslol420 I had similar jobs in youth... The key is to progress you don't want to spend 20 yrs. If this man is single with no kids lives with his family... He needs to consider military junior college at city school it's cheap or a trade school. Or apply to be a business driver cop firefighter or become a custodian with state or city or federal government.. they pay good and it's not as hard as dishwasher Plus there's so many opportunities in NYC because there are rich folks that need services from dog walker to nanny If it's so hard... I eventually became a tax accountant. In grew up in south Bronx projects 1970$🙏 That was hard

Dre if you see this comment, I want you to know that you are a hard worker and deserve to move up, not only within that restaurant, but in life in general!! My 3 day stint as a dishwasher at a local restaurant many years ago was lonely (the dish pit was in a separate room), thankless and the dishes never seemed to stop piling up. Nonetheless, as mentioned in the story, that job is as essential as any other in a restaurant. You have my upmost respect bro!! 🫡
