Almond Cake - 1810 2 heaping tablespoons of softened butter 2 cups of almond flour A splash of rose or orange flower water A little over 1 cup of granulated sugar 6 eggs The juice of half of a large lemon The rind of one large lemon Pour your almond flour into a mixing bowl and to this pound together half of one large egg white, or the egg white of a small egg, and your floral water. Combine until small pearls of flour form throughout. In a separate dish cream your softened butter and sugar together. In this same bowl then add 4 egg yolks and 1.5 egg whites, your lemon juice and lemon rind. Mix well. This batter will be a bright yellow and smell divine! Add your wet ingredients to your dry and mix well. Bake in a buttered cake pan at 350 degrees/176 C. for 40 minutes. Allow to cool for at least 10 minutes before removing from your pan. Baking time will vary depending on how shallow or deep your cake pan is. Test if it is done by sticking a fork or a toothpick in it after at least half an hour. If it comes out clean and the top has cracked it is done.

The steamship Arabia sunk in the Missouri river in 1856. It was packed with hundreds of thousands of everyday goods of the era. The wreck was discovered and excavated and thousands of perfectly preserved items are displayed in a museum in Kansas City. I mention this because it's shows the types of household goods available during the early nineteenth century. I was amazed at the variety.

I also saw your video about your mother and the hardship she faced being Assyrian. My heart goes out to you and your family. There are many recipes from medieval period on through that uses almond milk, almond flour, rice flour, potato flour, etc. Especially in Northern Europe where wheat didn't grow well. There were fast days, etc. too from Catholic faith that made large portions of year vegetarian for most people, with the exceptions that the Church made for certain types of animals like fish which many common folks didn't have access to. It's only when wheat became cheaply had that a lot of substitutes were done away with in sales and culture. Those recipes are great for gluten intolerant and those with Celiac and vegans as eggs and dairy were prohibited on meatless days, too

Our neighbor was kind enough to plow our driveway during a recent snowstorm and I wanted to bake him some cookies or something to say thanks. I started obsessing over it and told my husband that these days it seems everyone is allergic to stuff like nuts and gluten and you really have to be careful when you bake something so you don't end up killing them with an allergic reaction or diabetic shock. Gone are the good old days when you wouldn't think twice about dropping off some walnut brownies full of gluten. LOL. Love your channel!!!
