So Evan hope you'll read this. You can make the evolutioin simulation faster and even more demonstrably (A nice goal to achive for your future videos). Just split a simulation calculation into two threads: one is invisible (no need to render) and wokrs backround uses an all availaible cpu capacity and the other simulates as usual with render BUT it takes a current best specimen from the hidden thread.

i was thinking of a different solution for not crashing: only update the fittest players, and when one of them dies, start updating the next car. So if you have 100 cars, you only run the 10 best. When there is a tie, for example the first 2 cars have the same fitness, then it should be chosen with the frame count: on odd frames, it is car 1 that is updated, and on even frames, it is car 2. This should be a solution to smoothly see the progress of each player in the late game, and to eliminate the risk of crashing in the early game. Also, to make the training faster, you can cut a generation when the fitness drops by more than a certain threshold (constant or dependent of the dead player's fitness), to speed up the training, and exclude the bad players instantly. This method has a risk component to it though: some players that might be good but don't progress quickly can be eliminated, so this threshold has to be adjusted to get the best results. Also, i think the fitness function should encourage both distance and speed.
