Crispy chicken is one of the most essential dishes for banquets and gatherings in Hong Kong, as the dish symbolises prosperity and luck. Mastering this dish is one of the fundamentals for a Cantonese cuisine chef. The Post’s Lisa Cam visited three of the city’s top Chinese restaurants to discover the secret behind this beloved dish, which will be a highlight of many Lunar New Year banquets.

I remember a well known British celebrity chef named Heston who went on fannying about and explaining all that scientific bovine feces how to make the "best" crispiest chicken ever and it came out none as close as this. This is perfection!

True to cantonese influence, it's a usual dish served in Malaysian Chinese wedding banquets, alot of work to prepare if done right (to make the skin thin & crispy, meat not hard but flavorful). These Hong Kong chefs are awesome!

Most HK people possess a Cantonese accent but people who went to British international schools or international schools in general could have a strong accent (American or British) given that the international schools are very diverse. For instance, my geography and English teacher are from Britain while my science teacher is from Canada and so on. I get a hands on experience in an English speaking environment at a very young age, and the accent develops naturally.

@@czakhareinaOnly for Chinese lauriat/wedding receptions celebrating weddings usually serve it. Usually served after the appetizers, like a mini taster to prepare the guests for the soup and main dishes. It's tasty but not much meat. Surrounded by kropeck crackers. Many dishes are served one at a time. The eaten dishes are removed before the next one is served. Maybe 8 or so dishes? People help themselves. You sit at round tables with people you often do not know. During the reception, the newly Weds go around the tables and the guests have a toast with them. If you haven't tried a Chinese lauriat, try it! Sarap!

There's a new chinese restaurant that opened near me the owners are from Hong Kong. The peking chicken is so yummy. They also have alot of Chinese sauces on display that they sell has well. I feel like going there now after watching this video.

I would be VERY interested to taste one using a French chicken from Bresse (poulet or poularde de Bresse) as just normally cooked in a traditional rotisserie they are already amazing . Maybe I will learn to make it myself as it is not a dish on my repertoire ....yet ! 😋

Cooking as a whole is a art. That being said i dont think i have seen any people use food as a symbol for lots of things like wealth or long lives etc. The way i grew up is each dish has an étiquette when and to whome certain dishes are made but never as symbols. Its special to learn about food in diff cultures.

@@wavincewavince394 Yes I live in Hong Kong and many would wish the city has become communist if that means free housing for ALL. hundreds of thousands are forced to live in cage flats, a tiny flat the size of a car park is worth a few million HKD. Being Communist would mean all assets from bourgeoisie would be confiscated and shared to all. Even Mainland China isn't doing that, let alone Hong Kong.

I used to not think much of chickens, due to a skewed perception influenced by the factory farming BS. When I got chickens, it changed my perspective and it’s since slowly Evolved. I know highly respect farm animals and can see why they had almost godlike status in some cultures across the globe. If you get it you get It. They’re Nobel beasts that have climbed out of the mud to be by our side and sustain our species from when we were in the mud right by them, all the way to the stars.

3 and 5 a day 🤣 don't worry fellow viewers, this is only for these high-class restaurants I guess. Normal folk can still get plenty at the local hawkers take-out BBQ where they have at least 20 delicious crispy ducks and chicken every lunch rush :)

Yeah but the oil used will effect the taste of the fried ingredients. High end restaurant use clean and high grade oil suitable for the purpose. Cheap vendors use whatever and you pray they use new, clean oils so that it is edible. Unless it is rated 5 stars but 1k of local viewers. I don't suggest you try that particular vendors.

Most best Cantonese chef are origin in HKG. HongKees love anything to do wirh birds. When HKG stormed by pandemic with SARS bird flu, not a single chicks to be found.

It's not unique. In fact, USA also has a "crispy chicken". Just that they call it a different name. You might have heard of it. I heard that Kentucky had a famous version. They call it Kentucky FRIED CHICKEN! KFC for short. Yeah. I know Popeye's also has one. Oh right. Maybe the people who are mesmerized with "Crispy Chicken" are living under a rock.

I found it very tasteless, bland and extremely oily. Even the skin is tasteless. Often not seasoned at all, seems you get crunchy at the expense of any flavour. This is because this cooking method doesn't produce any "fond". Fond is that dark brown sticky caramelised proteins at the bottom of the pan and on meat roasted in a conventional Western oven. This sticky, salty, umami deliciousness also makes excellent gravy. Along with spices and herbs on the roast makes it truly scrumptious. I do like HK or what is called Peking roast crispy duck, though, much tastier, that's because duck has a richer red meat and the skin has lots of flavour so can take this cooking method much better without herbs and spices. Goose which is more popular these days doesn't seam to be as flavourful this style either.

It depends on where else you've eaten fried chicken. This crispy skin chicken is seasoned with 5 spice powder. No other fried chicken I've had uses this ingredient.

If you are referring to the typical western style fried chicken, the answer is NO. This is not a street food, it is a classic Cantonese dish typically served as part of a 8-10 course meal in a more formal Chinese dinner banquet. It is also served as a dinner dish in many authentic cantonese restaurants in HK and Vancouver, but preordering is usually required. Sadly, this dish is not even available in many UK cantonese restaurants. The chicken is prepared with specific traditional techniques and it's own unique seasonings, in addition, there is no batter. The chicken is cooked whole and served whole or occasionally as halve on a platter with some prawn crackers; the chicken is chopped into smaller pieces, for example, a thigh or a drumstick into 3-4 pieces and a breast into 5-6 pieces.

It's a Chinese superstitious practice. The word for chicken sounds like luck or prosperity. And for it to be abundant, it must be served whole or intact including head and feet. The same goes for fish. Always served with the head still attached. However,this is only during gatherings or celebrations. Home-cooked chicken meals are chopped up parts - no head, feet or tail.
