It's lunchtime from 1951! This no cooking and no heat required lunch turned out to be so good I made it again! Plus, the ice cream dessert hit just the right spot on this blistering summer day.
Here's what you'll need:
2 Avocados
1/2 c cooked shredded Chicken
1/4 c Seedless Olives, chopped
3 T French Dressing
1/2 c shredded cooked Ham
1 T Chives, chopped
3 T Mayonnaise
Mix together and serve on halved avocados. This can be sat on shredded lettuce if desired.
Dessert:
Canned peaches, drained
Vanilla Ice Cream
Seedless Raspberry Jam
Place peaches in bowl. Scoop ice cream on top and drizzle with jam. I mixed a bit of peach juice from the can to make it runny enough to spread.
