Blueberry Muffin Recipe:
1 cup butter
2 cups maple syrup
4 eggs
1 T vanilla
4 1/2 cups flour
pinch of salt
4 1/2 tsp baking powder
3/4 cup whole milk
5 cups fresh blueberries
Whip butter and maple syrup till light and creamy. Add eggs and vanilla and mix well. Add flour, salt, baking powder, and milk. Fold in blueberries. Spoon into muffin tins (fill to the top).
For streusel topping:
1 cup flour
1 cup oatmeal
1 cup sugar
1 tsp cinnamon
1/2 cup butter
1 tsp vanilla
Stir together flour, oatmeal, sugar and cinnamon. Add butter and vanilla, using a pastry blender until it resembles course crumbs. Divide between muffins
Bake at 400 degrees for 25 mins.
Yield: 24 muffins
