This recipe presents healthy, delicious and nutritious zucchini waffles made with whole wheat flour and bran. This recipe is an excellent choice for those who want to include more vegetables and healthy ingredients in their diet. Recipe:
Zucchini - 1 piece
Potato - 1 piece
Onion - half
dill
Egg - 1-2 pieces
Salt pepper
Whole wheat flour - 2-3 tablespoons
Bran - 1 tablespoon
If necessary, sour cream or yogurt
Vegetable oil for greasing the waffle iron
For the sauce:
Sour cream or thick yogurt
Garlic
parsley or coriander
Salt pepper
Grate the zucchini coarsely, place in a bowl, add salt, mix and set aside.
Wash the potatoes, peel them, grate them coarsely and transfer them to another bowl and set aside.
Finely chop the onion and add it to the bowl where everything is mixed.
Finely chop the dill and add it to the onion.
Drain the zucchini of any excess liquid and add to the mixing bowl.
Drain the potatoes and add them to the zucchini.
Add an egg, salt, pepper, add wholemeal flour and bran, mix.
If the batter is too thick, add sour cream or yogurt and mix again.
Heat the waffle iron and grease it well with oil.
Pour in the batter and bake for 4-5 minutes until cooked through. Remove the finished waffles.
While the waffles are baking, we prepare the sauce - add sour cream or thick yogurt to a bowl.
Add the garlic pressed through the press, salt, pepper, finely chopped parsley or coriander and mix.
Transfer to a serving bowl.
Serve the waffles with the sauce and garnish with fresh herbs.
