Here's a recipe for Aam Papad, a popular Indian sweet made from mango pulp: Ingredients: - 2 cups mango pulp (ripe mangoes) - 1 cup sugar - 1 tablespoon lemon juice - 1 tablespoon ghee (clarified butter) for greasing Instructions: 1. Start by preparing the mango pulp. Peel and remove the seeds from ripe mangoes. Blend the mango flesh in a blender or food processor until smooth. Ensure there are no lumps or fibers in the pulp. 2. Take a thick-bottomed pan or a non-stick pan and add the mango pulp to it. 3. Heat the pan on medium heat and let the mango pulp cook for a few minutes. Stir it continuously to prevent it from sticking to the bottom of the pan. 4. Once the mango pulp starts to thicken slightly, add sugar and mix well. 5. Continue cooking the mixture on medium heat while stirring constantly. The sugar will dissolve, and the mixture will thicken further. 6. As the mixture thickens, reduce the heat to low and add lemon juice. The lemon juice helps in setting the papad and adds a tangy flavor. 7. Keep stirring the mixture until it reaches a very thick consistency and starts leaving the sides of the pan. It should resemble a sticky paste. 8. Grease a flat tray or plate with ghee. Make sure the tray has raised edges to prevent the mixture from overflowing. 9. Pour the thick mango mixture onto the greased tray and spread it evenly using a spatula or the back of a spoon. Try to keep the thickness uniform. 10. Allow the mixture to cool down completely at room temperature for several hours or overnight. It should solidify and become firm. 11. Once the Aam Papad has completely set, cut it into desired shapes-either squares, rectangles, or diamonds. 12. Remove the cut pieces from the tray and store them in an airtight container. 13. Your homemade Aam Papad is ready to be enjoyed! You can serve it as a snack or a dessert. Note: Aam Papad can be stored at room temperature for a few weeks. If you want to store it for a longer period, it is recommended to refrigerate it.
