We love homemade pasta around her but because I work full time I like to make very large batches and preserve. I will show you how I make my pasta, dry my pasta and how to cook fresh pasta! I hope you try it!

My grandma was Italian and she told me to not put salt into the pasta dough if you want to dry it because salt attracts water/humidity. Only use salt in your dough if you eat it fresh or if you freeze it. Greetings from Austria

Yes. Add salt to the cooking water till it tastes like the sea

If you think about it adding salt is good cuz it will pull the moisture out of the pasta and make it nice and dry. And great for storing

@@lauriechuck4711 it‘s the opposite. If you add salt to your pasta dough the salt will pull water from the air into your pasta dough, shortening it‘s shelf live. Look at all the pasta (ingredient list) you can buy, none of them contain salt.

TIP...warm your eggs and use lukewarm water. Makes the dough more elastic and smooth.

My family, friends, and I love flavored pasta. Since my herbs are so abundant I use up my dried herbs from previous seasons in my pasta dough. It helps me use up dried herbs, takes no extra time, gives the pasta some extra oomph, looks pretty, and is just awesome in garden gift baskets. I like using citrus zest in some pasta doughs as well. There’s something really wonderful about lemon/thyme noodles in chicken soup, or lime/cilantro noodles in ramen and chow mein! The combinations are endless and yummy!!

One of my fondest memory of my Grandmother is making pasta and laying the noodles out on the yellow table to dry. Every so often she’d pick up a group of noodles with her fingertips to stir them to dry better. She’d ‘catch me’ sneaking a noodle before it was dry. Such a fond memory. 💜😀

I had a boyfriend when I was in high school in the 70's who was Italian & he lived with grandma who made homemade pasta. She had racks that she dried the noodles on.

I make large batches of pasta just like she does, but instead of drying mine, after cutting, I pile up a small "nest" and freeze them on cookie sheets, then put them in baggies in the freezer. When you put them in boiling water you gently teas them apart with a fork.

I make noodles like my German granny did, just put the flour out onto a board and put the eggs in a center well and mix with your hands. i was diagnosed with Celiac 30 years ago so it was a good thing I had this skill because you could not buy noodles in a store. I make mine out of rice and tapioca flour with some xanthan gum (adds stretch because of no gluten) After i cut mine I lay them on a cookie sheet in the freezer and when they are hard I bag them up. They cook in only 3 minutes from frozen.

To skip the adding water i found a recipe that starts with Weighing 3 eggs in grams Multiply by 1.6 to get grams of flour needed Add 1/2 t salt You are doing great making pasta and teaching everyone!

I just recently started watching your videos. I find them very interesting. There is one thing I would like to lt you know. I make homemade lasagna on a regular basis. I make my noodles from scratch. The one thing I discovered doing this is that when using fresh undried pasta you don't have to cook the pasta. Also I roll out my pasta in sheets the size of my pan, it's just so much quicker and easier. Please keep making your videos.

I love making it and sometimes I put a scoop of hot pepper spread{the kind you put on Italian subs} into the dough and that makes really great tasting pasta. Sometimes i add roasted red peppers to my dough that i have pureed in the food processor, It makes the noodles a beautiful orange color and adds wonderful flavor to the pasta.

I have been making our pasta for over 20 years now and I go by weight... 100g og OO flour to one egg.... it comes out perfect every time. Mix and knead until warm and silky, wrap and place in a warm place for around an hour. It will be smooth, soft and so easy to work with 😉

Yes yes yes. I have never dried my fresh pasta. So doing this with my home grown eggs. Papardelle is my favourite. Possibly what you made? Hard to exactly tell the size. Looks so yum. Thanks for sharing.

Thanks Becky! I have 7 doz eggs and attempted making pasta for the very first time EVER. It was amazing. I used a stand mixer and rolled it out with a pin. We made this pasta for the pantry challenge, and we linked your video in the description as our inspiration. We decided to kick it up and also make homemade RAVIOLIS and they were AWESOME! 🧡 Fresh pasta is amazing. Since we made several batches, we were also able to freeze the leftover raviolis, which made meal prepping so much easier. Thank you so much for sharing your videos.

Becky I loved making pasta with my dad. My daughter and I get together and make it once in a while but we really should make a bunch next time.

I love milling my own flour into an all purpose flour That fluffs the flour automatic. It also after sifting leaves me with the hull fiber to use in other recipes. It’s the grain fibers. Can be used in whole grain and flax muffins and add nuts ! You can make nutritious bars by adding honey etc.

I love homemade pasta and make it for my family too. I find pasta lasts even longer, better quality if stored in glass. I save and have family save their gallon pickle jars to store it in, half gallon mason jars works great too.

Great video! Like you, I love making big batches of good food so I have it for a good while. For me, it’s bread, canned vegetables, and soups. I’ve made pasta in the past,but only in smaller amounts- you have inspired me to accumulate more eggs!

Becky you can freeze em. And I think it's called glassing eggs or something ?? But you can preserve them like the old homesteading folks did
