Perhaps they were underdone, but I think the off color with more of a green hue is because they used olive oil. Good, light, olive oil you would use for frying would have that green color to it. 90% of restaraunts use canola oil for frying and the other 10% might use peanut oil. Both of those oils are honey colored, so the fries come out looking darker, as they suck up some of oil they are being fried in. Also, commercial fryers have a cycle that "cleans" the oil at the end of the night, so it can be used several times before it has to be swapped out. Canola oil is toxic to begin with, but I can't even imagine the oxidation levels present before it gets changed out.
