In Tamilnadu 🇮🇳 it is called kali, we use hot water, salt and raggie, it is healthy and delicious food, all curry is perfect but peanut chutney is perfect combination, personally I tried with curd /yogurt and salt

In the Netherlands we mash the kale with potatoes, pickled onions, vinegar, gravy, and boiled sausage. We eat it in winter. But this looks way better :)

Also in Tamil Nadu. .we eat ragi ball. We add some boiled rice to it. We eat it along with mutton curry. Green spinach curry.

We in North America call it Kale as well. You are brilliant at cutting veggies holding in your hand. So professional. I wish I could cut it as fast as you can. I guess practice makes perfect. Lucky you all get fresh coconut. We get in grocery stores, take them home, break it open and they are rotten. So disappointing. Food looks so yummy. Oh by the way, I'm from Nairobi, Kenya. Now live in North America.

We don't find any difference.. We in South India prepare Ragi Balls the very same way and use Mutton or Beef gravy as a combination. Awesome❤❤❤❤❤ Love from India
