Stuffed Brinjal
Ingredients :
Brinjal - 4
Oil - 3 tbsp
Water - As per Required
Peanut Powder - ¾ Cup
Turmeric Powder - ½ tsp
Red Chilli Powder - 1 tsp
Garlic Paste - ½ tsp
Salt - as per taste
Chopped Coriander - ¼ Cup
Method :
Prepare the Brinjals: Boil the washed whole brinjals until tender, then drain and cool before using them in recipes like stuffed brinjals or curries
Prepare the Stuffing: In a bowl, mix peanut powder, turmeric powder, red chili powder, garlic paste, salt, and chopped coriander.
Stuff the Brinjals: Take each brinjal and stuff the prepared mixture into the incisions.
Cooking: Heat oil in a pan over medium heat. Place the stuffed brinjals in the pan. Add a little water to the remaining stuffing mixture and pour it over the brinjals. Cover and cook for about 15-20 minutes or until the brinjals are tender, occasionally turning them gently to cook evenly.
Serve: Once cooked, garnish with fresh coriander leaves and serve hot with roti or rice.
