Purple hair suits you Alyssia. I was excited to see how you were going to make an egg wrapper to stuff and I really was surprised to see you use what's call a spring roll wrapper in Australia which is a type of pastry. The fillings you made would be nice in a sandwich toaster/jaffle maker or as a pie filling too. Mmmm.

I recommend enjoying these air fryer egg rolls fresh, on the same day that you cook them! I haven't personally tried freezing them. It's possible that you could assemble them and then try freezing the egg rolls BEFORE they're cooked, but you'd have to do some experimenting to see if/how this would work 🙂

I saw an earlier comment that the wrappers can be bought in the grocery store. Is any particular brand considered low carb? When I googled it, I got all kinds of hits including one that showed a egg white wrap. Yuck
