Akechi just overheard them talking a bit, and tried using what little context he could catch ("pancakes" immediately sticking out to him the most) as a way of organically sliding into the conversation. Though one could still argue that he shouldn't have tried using that given he clearly didn't hear everything said.

It's also because they can relate and empathise with him, and to an extent see beyond the facade of both the detective prince and the psychotic vengeful bastard child. Both Haru and Akechi mentioned that while they can't forgive him, they do understand that he's to an extent a victim of circumstances. Plus, I imagine having to work together toward a common goal helps, especially since, again, Akechi isn't nearly as much of an ass as he tries to make himself out to be.

Futaba said she would work with him simply because they'd need his help cause extra Persona user, and Haru almost sounds like she'll kill him if he betrays them again. Futaba: "Dr. Maruki's strong enough to change reality itself. If we're gonna fight him, we're gonna need Akechi's help." Haru: "Plus, if he does betray us again, we'll just take him out too."
