Ingredients Quantity
Oil 1 tbsp
Cumin seeds 1 tsp
Bay leaves 2 no
Baby potatoes boiled 250 gram
Asafoetida 1 tsp
Onion chopped 1 no
Garlic chopped 1 tbsp
Ginger chopped 1 inch
Green chilli chopped 2 no
Tomato chopped 2 no
Salt to taste
Coriander powder 1 tbsp
Red chilli powder ½ tsp
Turmeric powder ½ tsp
Garam masala ½ tsp
Black pepper crushed ½ tsp
Water ½ cup
Curd ½ cup
Fresh Coriander chopped 2 tbsp
Coriander chopped for garnish
Method :-
1. Place a kadai on medium flame and heat oil. Add cumin seeds and bay leaves let them crackle.
2. Take boiled baby potatoes and cut them one by two. Keep them aside in a bowl.
3. Add asafoetida and chopped onion, chopped garlic and chopped ginger sauté for 5 minutes until they turn light golden brown in colour.
4. Add chopped green chilli, chopped tomato and salt sauté for 2-3 minutes.
5. Now add coriander powder, red chilli powder, turmeric powder, garam masala and crushed black pepper mix well. Sauté for 2 minutes.
6. Add water, mix well and cook till the masala dries up.
7. Now add curd and mix well. Cook for a minute.
8. Add boiled potatoes and mix well. Place a lid on top and cook for 3-4 minutes.
9. Add in last freshly chopped coriander and mix well.
10. Once the potatoes are cooked, turn off the heat and side out in a serving bowl.
11. Garnish with chopped coriander and enjoy your homemade Aloo ki Sukhi Sabzi!
